This recipe can be made with gluten-free low-sodium tortillas or regular gluten-free tortillas. Regular ones are much higher in sodium than the recipe I provide. I made these enchiladas with two different sauces, one for me and one for my husband. He loves the traditional sauce. Many of you may have a particular favorite already in mind. I offer a simple alternative sauce under the many “Tips” I list below. I used to make enchiladas with plain chicken and load it with cheese for flavor, but have learned to give them flavor without the extra calories and cholesterol. You can do both, though. I have been craving an old recipe of mine that I no longer can have due to my tomato allergies, but created this one as a substitute. There a ton of variations to this recipe which is great because you’ll never tire of it. Looking for delicious gluten free soup recipes? I harvested my first round zucchini (photo below) this week and decided to use it to test a new mango soup recipe. You are sure to see more zucchini recipes in the near future because my plants are growing like crazy! You can serve this soup warm or cold. This is recipe is great way to use up any produce you have that may soon spoil or wilt. My original intention was to only use vegetables and one fruit, but I was awfully hungry while making it and decided to toss in a potato and am glad that I did. It was very tasty and satisfying! I have been wanting to make some homemade pickles, which is something I have never done before, when I saw a bag of mini pickles at Costco the other day. I just had to have them! I created an easy pickle recipe that you can either spice up or not with red pepper flakes to your liking, as well as adjust the sweetness. Since our grandkids were visiting this week I was in a hurry and wanted a fast recipe so I opted to make sliced pickles instead of leaving those adorable little things whole. My mother made a few southern dishes that were family favorites. It’s been years since I made my mom’s red beans and rice recipe, but this time I changed things around, making it lower in sodium and by adding a little kick to heat it up a little. With or without heat, these beans are very flavorful. My mother use to always make them using a ham bone with lots of meat left on it. When not available she would use a ham hock, but didn’t like the additional fat, and I agree. To lessen the sodium content, I used very lean, very thin pork chops cut into bite sized pieces. When I tasted it, I could have sworn it was ham without all the salt! If you on a low sodium diet use the chops; if not use a ham bone if you can find one. My gluten free spaghetti sauce recipe is a bit of a modern version of the authentic Italian spaghetti sauce that my Sicilian grandmother used to make. I have included both the authentic ingredients as well as a few shortcuts I take. I sometimes use dried parsley, canned mushrooms, etc. You can use all fresh ingredients or opt to take the shortcuts, but they both taste wonderful.
