Gluten Free Pineapple Cherry Upside Down Dump Cake
A surprisingly addictive gluten free dump cake recipe made with canned cherry pie filling and canned pineapple. A dump cake is an easy recipe where you literally dump the ingredients into a baking dish and bake it. Using a cake mix is the usual method. While you can use Betty Crocker’s Gluten Free Yellow Cake Mix in this recipe, it is so much better when you use my self-rising gluten free cake flour blend recipe and sugar. I am not a fan of cherry, but combined with pineapple, the flavor is pretty incredible. I couldn’t stop eating it. I felt so guilty afterwards. Gluten Free Matzo Ball Soup
About three years ago, my father’s lady friend and her daughter bought the ingredients to make my father matzo ball soup. They were going to use a packaged matzao ball mix. They had to leave early because my father became ill. So, they never got a chance to make it. I decided to give it a go. Instead of making their gluten version, I developed this gluten free matzo ball soup recipe and dropped some off at their hotel before they left. Sweet & Savory Gluten Free Meatloaf
Savory enough for adults with enough sweetness to please the kids, this gluten free meatloaf will please all. My husband grew up on a Kid-Friendly Meatloaf Recipe which contains ketchup. I’m trying to get him away from all of the salt that ketchup contains. mainThis is it! It’s sweet without too much salt. I love it! As a kid, I hated my mother’s meatloaf, but fell in love with mother-in-law’s ketchup-oatmeal version. I’ve been allergic to tomatoes for years and had to give it up. Now this is one you can sink my teeth into. The flavor remains even between two thick slices of bread. In addition, it’s so moist.

Sweet & Spicy Gluten Free Soba Noodles & Chicken
Soba means “buckwheat” in Japanese. Many Japanese dishes contain soba/buckwheat noodles. King Soba offers safe, gluten free soba noodles in a variety of flavors. My favorite is their Buckwheat & Sweet Potatoes Noodles. Buckwheat noodles are so much healthier than rice pasta. I use them in stir-fry as well as other pasta recipes. The texture is amazing and holds up well. Just be sure to cook them al dente before frying them in this recipe. I usually use the Sweet Potato Soba Noodles. I just love the sweet flavor, even in savory dishes. They would be ideal for this dish as it is slightly sweet and slightly spicy. Sweetness with spiciness is a marriage made in heaven, in my book.
