Gluten Free Shrimp Gumbo with Rice

This spicy gluten free seafood gumbo consists of shrimp and red snapper and is a Cajun favorite, especially during Marti Gras. Gumbo stew is a Louisiana tradition and is famous for its dark roux (flour and butter). My mother was born in Louisiana; therefore, I think of her often when I make southern dishes. Gumbo is known for its dark roux and file spice. Adding in the holy trinity (onion, celery, and green peppers, some heat from ground cayenne pepper and hot sauce, and you have yourself an awesome creole dish. Feel free to substitute the red snapper and shrimp for your favorite seafood, firm fish, chicken, or sausage. If you read anything on this page, you must read how Alton Brown makes a dark roux!

Gluten Free Puff Pastry Recipe

I have had many requests for a gluten free puff pastry recipe that does not take 3 days to make. This one can be made in one day and used for pastries like Danish as well as savory dishes such as beef wellington. One of my cookbook recipe testers stated, “Some things are worth waiting/working for.”

Phyllo Dough is very thin sheets of dough. Even though both recipes are actually gluten free puff pastry, it is the closest thing we can use in gluten free baking. There are differences between the two recipes. Some of the differences in this gluten free puff pastry dough recipe is that it contains butter in the dough, more flour in the butter block, less butter for the butter block, much more yeast in the dough, and the addition of eggs. Once the butter is added and folded, there are only three rolls and folds to perform. You only have to fold in half or in thirds, no fancy envelope folds. Classic Gluten Free Minestrone Soup

It may at first appear that would not need a gluten free minestrone soup recipe and that it is naturally gluten free. However, you will need to know which brands of broth are gluten free, as well as gravy enhancers, if using. In addition, when storing leftover soup containing pasta, it tends to get soft and mushy. To prevent this, using my homemade egg noodle recipe avoids this problem. You may also cook the pasta separately. Check out the brands of pasta I enjoy most.
