While I already have a gluten free egg rolls recipe on this site, this gluten free lumpia recipe is a bit different. The filling and dipping sauce is spiced with garlic, and the sauce has strong accents of garlic and soy sauce. I usually make my egg rolls filled with ground pork, vegetables, and scrambled eggs and my spring rolls with all vegetables. This lumpia is filled with ground beef and vegetables, though you may use pork, shrimp, and more, as well as just vegetables. Either way, they are crispy and delicious as well as the sauce. Strawberry Tomato Salsa (Naturally Gluten Free)
If you are seeking a refreshing summer recipe, this strawberry tomato salsa is it! It is often served with fish, however, you can also serve it with chicken or pork. It makes a great dip for tortilla chips or serve it as a salad atop a bed of baby greens. Either way you serve it, those who have never tried it, usually thoroughly enjoy it. Gluten Free Rainbow Cake
The recipe for this gluten free rainbow cake is also dairy-free. Of course, you will need to use a dairy-free frosting or dairy-free whipped cream (which I do not list below). This cake is great for kids’ parties or to brighten up anyone’s day. The cake is a sponge cake which makes the perfect cake to use with whipped cream. This cake makes a great St. Patrick’s Day recipe because, you know…the pot of gold at the end of the rainbow. Continue reading “Gluten Free Rainbow Cake”
Gluten Free Apple Muffins or Cupcakes
Moist gluten free apple muffins anyone would surely enjoy, even your gluten-eating friends and family members. If you already have a batch of Carla’s Gluten Free All-Purpose Flour Blend Recipe already made up, they are fairly simple to make. This particular recipe should turn out well with any gluten-free all-purpose flour blend. However, my flour blend recipe contains superfine rice flours which are very close to gluten all-purpose flour. I hope you enjoy them as much as I did. Thin Soft Gluten Free Wraps
These gluten free wraps are soft and pliable, and that’s not all. They are packed with protein. They fall somewhere between a tortilla and a crepe. Don’t allow the fava bean flour to scare you off, if you have tried other bean flours and they were bitter. Fava bean is very mild and not bitter at all. Combining beans with eggs boosts the nutrient values in the beans as eggs are a complete protein (contains all essential amino acids). This recipe is gum-free and grain-free. You finally have a thin, soft gluten free wraps that is pliable enough to roll and slice your favorite appetizers. Enjoy! Continue reading “Thin Soft Gluten Free Wraps”
Gluten Free Blueberry Coffee Cake
This gluten free blueberry coffee cake may be made three different ways. You can use canned blueberry pie filling and layer it as seen in the photo below and add an optional glaze. You can use fresh or frozen blueberries and fold them into the batter. Lastly, once you fold the blueberries into the batter you can top it with the streusel topping recipe I have supplied below. I chose the quickest method, pie filling, and it was delicious. Enjoy this blueberry coffee cake, no matter how you assemble it. I have included instructions on how to bake it in a 9-inch round pan, 9 x 9-inch square pan, or see the tips section for making a larger one in a 9 x 13-inch pan. Starch-Free Gum-Free Leavener-Free Gluten Free Cake Recipe
I am aware that many individuals on a gluten free diet are watching their intake of starch. In addition, some individuals have trouble with gums. This gluten free cake recipe is free of all starch (potato, tapioca, arrowroot, and cornstarch) and gums (xanthan, guar, etc). It is also free of leaveners such as baking soda and baking powder. Obviously, the cake still calls for sugar, which is still high in carbohydrates, but you save a ton of carbs and have added protein from the eggs in this gluten free cake recipe. It is light due to the whipped egg whites that are folded in towards the end. I’m not keen on using rice flour in cakes because it is usually gritty, unless it is a superfine rice flour. For those who still use it, enjoy! Continue reading “Starch-Free Gum-Free Leavener-Free Gluten Free Cake Recipe”

Gourmet Fresh Gluten Free Peach Crisp
This gluten free peach crisp is awesome! It calls for plenty of butter in order to make the topping nice and crispy. If you are wondering what the difference between a cobbler and a crisp is, a cobbler is made with a dough batter, similar to biscuit dough. A crisp is usually made with flour, brown sugar, cinnamon, and butter. A crisp has a crumbly topping. Cobbler got its name because the biscuit dough is usually dropped in pieces, creating a cobblestone affect. Meanwhile, enjoy this gluten free peach crisp. Be creative and add your favorite ingredients – perhaps a bit of fresh ginger to bring on a little heat. Continue reading “Gourmet Fresh Gluten Free Peach Crisp”
Wine and Cheese Gluten Free Cracker Recipe
I am honored to present this gluten free cracker recipe that I developed for WholeVine. They offer grapeskin and grapeseed flour made from wine grape remnants as well as gluten free cookies. A couple of months ago I surveyed my Facebook followers for their favorite wine, and Riesling was the winner. So, I used Riesling grapeseed flour in this gluten free cracker recipe. However, they offer several other varieties, including grapeseed flour. Just be sure not to use grapeseed flour in this recipe as additional liquid ingredient would be required. Meanwhile, cut your favorite cheese, pour a glass of wine, and enjoy! Continue reading “Wine and Cheese Gluten Free Cracker Recipe”
