Gluten Free Pie Crust with Lattice Top (No Starches)

For pie crusts, I usually use my Gluten Free Phyllo Dough Recipe, as I created it long ago when I was satisfied with this heavier texture as a substitute for phyllo dough. However, it turned out to be a wonderful gluten free pie crust recipe instead, but it is not dairy-free. I used it in my Gluten Free Peach Custard Tart. This new recipe is dairy-free. Gluten Free Consomme Rice

My mother was famous for her beef consomme rice recipe. However, Campbell’s Beef Consomme Soup is not gluten free; therefore, I could no longer make it. Missing its jell-like properties, I decided to convert her recipe to an easier gluten free one, using plain broth. Though if you have the time, Emeril on Food Network has a wonderful gluten free consomme recipe, where you can use any flavor broth you desire, (beef, chicken, or vegetable broth) (make sure it’s gluten free). It all depends upon what you are serving and/or your dietary needs. Beef has the best flavor, to me. However, the photo below represents chicken consomme rice since I was serving chicken that day. My husband enjoyed it so much, he went back for seconds. Continue reading “Gluten Free Consomme Rice”

Gluten Free Chocolate Truffle Cake

If you enjoy truffles you’ll definitely enjoy this gluten free chocolate truffle cake. A thick, rich chocolate truffle cake made with plenty of eggs, topped with a chocolate ganache frosting, and garnished with either sweetened whipped cream or fluffy white frosting. I prefer the whipped cream, as the recipe is rich already. Enjoy, whether for a special occasion or just for a special treat. Continue reading “Gluten Free Chocolate Truffle Cake”

Gluten Free Salisbury Steak

I was in a hurry and defrosted some steak, thinking it would be the fasted thing to make. Then I decided that plain steak, whether barbecued, grilled or fried, just didn’t appeal to me. I haven’t had a salisbury steak in decades, and have never made one myself. So I decided to make a gluten free salisbury steak recipe for this blog, as it is a classic American dish. When my husband tasted it he said it was delicious, and added, “Did you notice that I said ‘delicious’? I usually say something’s good. That was delicious!” So, if you and/or your family enjoys a bit of a sweet sauce, you’ll love this recipe, as well. Enjoy! Continue reading “Gluten Free Salisbury Steak”

Gluten Free Oyster Crackers

It’s been months since I received a request for a recipe for gluten free oyster crackers. I finally had the courage to give it a try. With very few gluten recipes to go by, I am very happy with the results. I have provided dairy-free and vegan options, though the results will vary depending upon the ingredients you use. Mainly the browning amount will change. Though if you were to use whole milk, it would make them a tad bit softer, yet more flavorful. I have provided the ingredients I used, and in parenthesis the alternatives. Get that clam chowder ready for this fall and enjoy it with these gluten free oyster crackers! Gluten Free Funnel Cake

One of my Facebook friends asked me if I had a gluten free funnel cake recipe. I didn’t, but it intrigued me, as I had never made one, or tasted one before. I headed on over to one of my favorite chef’s, Alton Brown, to see how he made them. You can watch his Funnel Cake video. Either click on the photo with the arrow or the Video tab above the recipe. Funnel cakes are usually served at fairs, carnivals and street vendors. If you’re missing them now that you’re gluten free, try making this recipe at home. I must say, they are very addicting! Continue reading “Gluten Free Funnel Cake”

Gluten Free Baked Beans

My husband signed me up to bring baked beans to the family reunion. Therefore, I made gluten free baked beans. I’m allergic to tomatoes and haven’t had Van de Camp beans in ages, as it has tomatoes. However, Bush’s baked beans are tomato-free. Yes! I haven’t made these in decades! My husband’s idea was for bacon to be added. And since I’m a worry-wort as far as never making enough, I went for it, as it added volume to the recipe. And I’m really happy that I did, as it was a perfect addition, as far as flavor goes. And you skip the bacon if you’re watching your weight or cholesterol levels. The onion, garlic and bell pepper provides enough flavor. I hope you appreciate this recipe. My husband was delighted!
