I have been craving this green goddess salad dressing recipe for about a month, and finally got around to creating it. When I looked at the ingredients for Kraft brand Gluten Free Goddess dressing I saw that it contained xanthan gum. Luckily for us gluten free dieters, we usually have this ingredient on hand; however, you don’t have to include if you prefer a gum-free salad dressing. You can just use less water as needed and add vinegar to taste at the end. The best part about this recipe is that t does not contain any blue and yellow food coloring. Instead, it calls for naturally green ingredients such as parsley and avocado. I hope you enjoy this recipe! Continue reading “Green Goddess Salad Dressing Recipe (Naturally Gluten Free)”
Gluten Free Spinach and Herb Roulade
Italians make frittatas from vegetables and eggs on the stovetop or baked. Sometimes they even add cheese. I decided to turn a frittata into a roulade. This gluen free spinach roulade makes a beautiful presentation and tastes amazing. Enjoy! Continue reading “Gluten Free Spinach and Herb Roulade”
Gluten Free Lefse (Scandinavian or Norwegian Flatbread)
Lefse is a soft flatbread, similar to a tortilla. This gluten free lefse recipe is no different. It is often made of potatoes, however you may use gluten-free potato buds (see link below for a gluten free brand). There are many different versions of lefse. The Norwegian version is made of flour, usually potato, cream, sometimes lard, and cooked on a griddle. Special tools are usually used to make lefse, even gluten free lefse. Most people use a griddle, a rolling pin cover, and a lefse stick to turn them over. However, if you get creative you can make them with other tools and pans (see Tips section below.) When using fresh potatoes, you need to use a ricer. However, this recipe calls for Potato Buds instead of fresh potatoes. I know not everyone owns a ricer. I will publish a recipe for lefse made with fresh potatoes another day. Meanwhile, enjoy this recipe!
For a similar recipe, not calling for boxed potatoes, see my Soft Gluten Free Naan (Indian Flat Bread). It has received many raved reviews.

Sugar-Free Dairy-Free Gluten Free Oatmeal Raisin Cookie Recipe
With the advent of the new year, I thought you would appreciate a healthier choice for a gluten free cookie recipe. This classic gluten free oatmeal raisin cookie recipe is made with ground oats instead of whole and is sweetened with stevia, dates, and as an option, less or non-refined brown sugar. You may use gluten free oat flour, if desired. Bon appetite! Continue reading “Sugar-Free Dairy-Free Gluten Free Oatmeal Raisin Cookie Recipe”
Grain-Free Gluten Free Bread with Almond Flour (Gum-Free)
One of my Facebook followers requested a gluten free paleo bread recipe with almond flour. Neither my husband or I are on a paleo diet, but it sounded wonderful. While many paleo dieters avoid yeast, other do consume it. This recipe is yeast-based. I will make another one in the near future using baking powder and/or baking soda for those who do not consume yeast. Meanwhile, this bread has a soft crust due to the psyllium husk powder, the texture enables you to fold the bread, and is truly delicious. Enjoy! Gluten Free Cream of Chicken Soup
While Progresso makes a creamy gluten free mushroom soup, they do not make a gluten free cream of chicken soup. With that said and a recent request from a Facebook follower, I thought you would appreciate this recipe. Make it super rich using cream, dairy-free with your choice of milk, or with any fat content of cow’s milk. Enjoy! Continue reading “Gluten Free Cream of Chicken Soup”
Miniature Meringue Cake Recipe (Dairy-Free Options)
Happy New Year! If you’ve made a New Year’s resolution to lose weight, these miniature meringue cakes are the perfect dessert to cut back on carbs. Use gluten-free dairy-free whipped cream as suggested below or heavy whipping cream is wonderful for making in advance, making more time to spend with guests. Mini Fried Gluten Free Pies: Sweet or Savory (Dairy-Free)
When you just cannot deal with rolling a double gluten free pie crust, these mini fried gluten free pies are ideal. However, unlike pie crust, they are crunchy. You may fill them with sweet or savory fillings. For my test recipe I just used Comstock fruit pie filling. Both Comstock and Wilderness brands are gluten free. These little gems are similar to empanadas (Spanish pies), but instead of baking them, you fry them. When empanadas are made in smaller sizes to serve as appetizers, such as these, they are named tapas. You may wish to check out my savory gluten free empanada filling (the crust on that recipe is a traditional gluten free pie crust), or my homemade sauteed apples for a healthier filling, if you’re not a quick open-a-can type of person. Fried Gluten Free Ravioli
This is a perfect way to use leftover store-bought or homemade ravioli. While you do not have to make homemade breadcrumbs or pizza sauce, they both are delicious additions. Serve as appetizers or main course.
I enjoy using them as an alternative to Totino’s pizza rolls. They truly make an amazing appetizer. Fill them with beef, cheese, or your favorite pizza toppings and serve with a simple marinara sauce, or your favorite gluten-free pizza sauce. Freezing the ravioli prior to and after breading make them crispier. However, if you’re not a crispy lover, skip the freezing. Either way, what’s not to enjoy?
