I originally went gluten free in 2005. I have long since given up on eating out at Chinese restaurants other than PF Chang’s. They serve sumptuous gluten free Chinese food, but most dishes are extremely high in calories. So, I often make my Chinese food at home instead. Moo shu is usually served with pork; however, I used beef in this recipe. You may serve it over rice or make it low-carb by serving it over sauteed vegetables. You can even use it to stuff a gluten free tortilla or pita pocket. Made with top sirloin, it is exceptionally tender and delicious.

Gluten Free Anadama Bread

This gluten free anadama bread recipe is a variation of the Anadama bread made years ago in Massachusetts. It was a corn meal and wheat-based bread lightly sweetened with molasses. Though it existed prior to the 1840s, a baker used to deliver the bread to households in in the late 1800s in Massachusetts. It was later baked by a restaurant owner until 1956, and then by a bakery on Cape Ann in Massachusetts until 1970. Other bakeries offered anadama bread for several years later, however, it eventually lost its popularity. This gluten free anadama bread is similar, but uses rice flour instead of wheat. If you are intolerant to rice flour, you may substitute it with sorghum flour. This bread makes a wonderful breakfast bread as it tastes a bit like an English muffin. Chocolate Gluten Free Crepes

Crepes are a thin, moist pancake, and usually richer due to added butter. However, this gluten free crepes recipe may be made with healthier by using margarine, dairy free spread, and dairy free milk, if desired. For darker crepes, use Dutch processed cocoa (Rodelle brand is gluten free). It is not acidic like pure cocoa powder. Meanwhile, enjoy these gluten free chocolate crepes. Gluten Free Fried Ice Cream

Have you ever had gluten free fried ice cream, or http://ir-na.amazon-adany fried ice cream before? If not, you’re in for a fun and delicious treat. I love making this for guests. It is a real conversation maker. Traditionally, they are made with ground corn flakes, but if you cannot find any such as Glutino Corn Rice Flakes, you can use your favorite cereal such as Gluten Free Rice Krispies and others. Even ground gluten free graham crackers will work. You have a choice of either grinding the cereal finely or crushing them so they are left in little pieces. Egg foo young, also spelled egg foo yong, egg fu yung, egg fooyung, and egg furong, literally means “lots of eggs”. This gluten free egg foo young is prepared with eggs, vegetables, and meat or shellfish, if desired. You can add your favorite vegetables or traditional bean sprouts, bamboo shoots, sliced cabbage, or mushrooms, to name a few ideas. Water chestnuts or bamboo shoots add a delightful texture. What makes it distinctly different from frattata (its Italian cousin) is the sauce it is served with. Gluten Free Chicken Korma (with Dairy-Free Option)

I have been wanting to develop a gluten free chicken korma recipe for quite some time, now. It is my favorite Indian dish next to butter chicken. Chicken korma is a spicy Indian dish using turmeric or curry plus other spices. Along with cream, it creates a rich, flavorful dish. You can adjust the heat in this gluten free chicken korma by reducing the cayenne pepper, ginger, and coriander, if necessary. It is of medium heat for an Indian dish, though if not accustomed to Indian food, you may think it is hot. Indian food contains many anti-inflammatory spices, making it a smart choice for an entree. My quest to develop a gluten free ice cream sandwich took much more time than I expected. I first tried to adapt my own moist Gluten-Free Dairy-Free Chocolate Cake recipe. I just left out the leaveners. However, it turned out very gummy and too chewy. Fried Gluten Free Mozzarella Sticks Recipe

My husband’s favorite junk food snack is onion rings. He’s never had fried cheese, though. So I just had to create a gluten free mozzarella sticks recipe. It’s crunchy and flavorful. If you want them to have a deeper color, use the chili powder. To make them yellow, add a bit of turmeric. You can spice them up or give them an Italian flare. They make great appetizers or snacks. To provide flavor, add a bit of grated parmesan cheese. If you use the shaker kind, be sure to use a gluten-free brand such as Kraft. They’re also awesome dipped in the batter and then rolled in bread crumbs. That provides more texture. I also have a Gluten Free Cheese Sticks Recipe using bread crumbs. Gluten Free Chocolate Ice Cream Recipe (or Rocky Road)

Sunday, July 21 is National Ice Cream Day. I am mid perfecting a gluten free ice cream sandwich recipe and have been experimenting with a new gluten free chocolate ice cream recipe. I have made chocolate ice cream with a bit of xanthan gum, but this one turned out the best so far. Adding gum to homemade ice cream helps prevent crystals from forming and it provides a bit of chew. Using additional cream also helps prevent ice crystals and hard ice cream. There’s nothing worse than hard homemade ice cream. Enjoy!
