Gluten Free Lentil Soup with Bacon

Gluten Free Lentil Soup with Bacon

Stop the presses! This is my all time favorite out of all of my gluten free soup recipes! I love anything with bacon, but try to not eat it too often, as most of them contain many preservatives, not to mention the calories. I am having overnight company in about a week and decided to make my famous lentil bacon soup. Kids love it as well as adults. Who doesn’t like bacon, right? I am sure they exist, but it is as many who do not like chocolate. Continue reading “Gluten Free Lentil Soup with Bacon”

Gluten Free Brioche

Gluten Free Brioche Buns

Brioche is reminiscent of the first breads ever made. When Marie-Antoinette said, “Let them eat cake!” she was referring to a bread much like brioche, in between an egg bread and cake. I watched Martha Stewart make brioche buns on her Friday, April 30, 2010 episode, and I just had to figure out a way of making a gluten-free brioche. With a few alterations I had much success! They rose very nicely. This gluten free brioche recipe is a sweet, buttery, spongy egg bread and is like nothing I have ever eaten – an experience everyone should have at least once. This recipe is much faster to make than typical brioche. You do not have to wait several times for the dough to rise, especially the one you wait for overnight. No one would ever guess this is a gluten free brioche, as it does not taste grainy. You may serve it as a dessert or with a meal just as you would serve corn bread. Brioche is very popular in New Orleans. Continue reading “Gluten Free Brioche”

Gluten Free Avocado Chicken Salad

Avocado Chicken Salad

I love avocados and I thought, “Why not mix it up with chicken for an avocado chicken salad sandwich or atop a salad?” I allow myself a serving of avocado once a week, as a treat. Adding a little Greek yogurt makes this recipe even less in calories, or use mayonnaise for richness, or neither. This is a quick, easy avocado chicken salad recipe that anyone can make. And it’s great for using up leftover chicken. You’ll see the sandwich photo below which shows the dairy-free version, and the salad photo showing the dairy version Continue reading “Gluten Free Avocado Chicken Salad”

Low Fat Healthy Baked French Fries

Low Fat Baked French Fries

Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise form the bottom through holes in the pan, allowing browning to occur on both sides. A little olive oil spray makes them taste like regular french fries. UPDATE: I have successfully made these using a regular baking sheet. You may use russet potatoes, sweet potatoes, or golden or red potatoes. Guilt free French fries! What’s not to enjoy? Continue reading “Low Fat Healthy Baked French Fries”

Chewy Gluten Free Brownie Recipe

Gluten Free Chewy Brownies

This is my first stab at creating a gluten free brownie recipe. It turned out very chewy, just what I had in mind. They are not cake-like at all. I used potato starch in this one. Next time I may try using almond flour just because I love the taste of it, but this time I just added some chopped nuts. You can use your favorite nuts. I not only enjoyed the brownies, but I really liked the fact that there was not a lot of mess to clean up as I went along. Continue reading “Chewy Gluten Free Brownie Recipe”

Gluten Free Pear Corn Muffins

Homemade Gluten Free Pear Corn Muffins

I saw another great dessert on Martha Stewart’s Show last week, Corn Muffins with Pear and Candied Ginger. Of course, I had to create a gluten free muffin recipe version. It does not call for superfine rice flour. The original recipe called for candied ginger which did not sound appealing to me, but I will never know, as I did not have any on hand. The recipe below calls for many ingredients, but is fairly simple to make. This is the best gluten free muffin recipe I have ever made or ever tasted – straight out of the oven and when cooled. Gluten Free Custard Recipe for Cream Puffs, Creme Brulee and More!

Baked Custard

Custard is my favorite dessert next to ice cream and this one is my favorite, as it is a custard recipe for cream puffs! I also use it for creme brulee. It’s a great all-purpose gluten free custard, without the use of any flour. I created a Gluten Free Cream Puff Recipe yesterday upon the request of one of my readers and for my father who is visiting me. He’s Italian and cannot resist a cream puff, even a gluten free cream puff! A matter of fact, I had my best shaped cream puff on the table and had left the room. Upon returning, I found the cream puff in his mouth! I told him I was saving that one to fill and needed to take a picture of it. He said, “The damage is done!” and laughed! We both laughed. My father is 100% Italian and cream puffs are a delicacy. He loved that one but loved the ones I later filled even more. Being a connoisseur of cream puffs, he can attest to that this custard recipe for cream puffs is tops in his book! I hope you enjoy, as we both did!
