I have only had chicken cordon bleu once in my life, a matter of fact, it was when I was still dating my husband, back in the 70s! Making gluten free chicken cordon bleu was a breeze. It’s not much more difficult than breading chicken. However, it’s delicious! My version uses an herb prosciutto mix. However, you can use slices of prosciutto instead, to make it easier, which is the traditional method. I enjoyed the extra herbs, though. Plus I had some leftover from my Pork on Pork recipe. Prosciutto is a popular Italian delicatessen cut of meat used in many popular main dishes such as Chicken Cordon Bleu. Prosciutto is to ham as pancetta is to bacon*, similar, yet different. In my attempt to create more single-serve recipes, I recently tested out my small, inexpensive, ceramic waffle iron to make gluten-free quesadillas. They turned out incredible! They have a slight crispness to the outer shell, which you can control by cooking shorter or longer. The inside contains gooey cheese with chicken, or any other addins you prefer. I’ have eaten two amazing pound cakes in my life. This gluten free cream cheese pound cake is one of them. The other is the Gluten Free Bundt Pound Cake, which is lighter.

I had originally created a gluten free sour cream pound cake recipe for another website client of mine, but they temporarily removed it from their site while building another website. When Chobani sent me coupons for their amazing Greek yogurt, it inspired a few new recipes. To start the ball rolling, I made a Greek cucumber yogurt sauce and used it in these delicoius gluten free beef gyros. Instead of pita, I used my gluten free galric naan recipe (Indian flatbread). Greek Cucumber Dill Sauce or Dip (Tzatziki Sauce)

Greek Yogurt Cucumber Dill Sauce

Tzatziki sauce is a Greek cucumber sauce served with meat or used as a dip. Tzatziki is primarily made of strained yogurt, in this case, Chobani Greek Non-Fat Yogurt. It’s gluten-free! They sent me some coupons for a few free yogurts so that I can create a tailgating recipe for them. Though this sauce is Greek, you can use it with other cultural foods such as saucy Indian dishes, as a dip with naan (Indian flatbread), on enchiladas, and as a dip with veggies as a snack. For authentic Greek dishes use as a sauce for gyros, or as a dressing for cucumber salad or other Greek salads. Gyros are perfect for tailgating. Soft Gluten Free Garlic Naan – Oven-Baked or Stovetop

Oven-Baked Gluten Free Naan

Naan is the Indian version of flatbread. There are two versions, crisp/firm and the one I prefer, soft. The soft is to-die-for and is the only version I make! Everyone who has tried my skillet version raves about it. If you have a pizza stone, that version is even better! That’s all I make during the fall and winter.
