Waffle Iron Gluten Free Quesadillas & Spicy Dipping Sauce

In my attempt to create more single-serve recipes, I recently tested out my small, inexpensive, ceramic waffle iron to make gluten-free quesadillas. They turned out incredible! They have a slight crispness to the outer shell, which you can control by cooking shorter or longer. The inside contains gooey cheese with chicken, or any other addins you prefer. Then dip some non-fat, sweet & spicy dip on top for some kick!

Waffle Iron Gluten Free Quesadillas & Spicy Dipping Sauce

Waffle Iron Gluten Free Quesadillas & Spicy Dipping Sauce

Delicious gluten free quesadillas made in a waffle iron! Add a non-fat sweet and spicy dip, if desired.

Ingredients:

    For the Spicy Dipping Sauce:
  • 1 (5.3-oz.) non-fat gluten-free plain Greek yogurt (I used Chobani brand)
  • 1 Tablespoons honey
  • 1 teaspoon to 1 Tablespoon gluten-free chipotle sauce* (I used 1 Tbsp. Bufalo brand)
  • For the Gluten Free Quesadillas:
  • 2 gluten-free corn tortillas (I used Mission Super Size)
  • 1/2 cup loosely packed shredded Monterey-Cheddar Cheese mix
  • 1/4 cup shredded cooked chicken breast (optional)
  • 1 teaspoon gluten free diced green chiles (optional)
  • To Make the Dipping Sauce:
  • Whisk together all three ingredients and chill until ready to serve.

Instructions:

    To Make the Quesadillas:
  1. Preheat the waffle iron according to manufacturer's instructions. (I placed mine on medium-low heat.)
  2. Place one tortilla on the preheated waffle iron.
  3. Top with cheese, chicken, or other addins.
  4. To the top of the filling, add another tortilla. Close the lid, applying pressure along the way, about 7 seconds. Cook until cheese melts, 2 - 3 minutes. If the cheese oozes out onto the waffle iron, remove the cheese and wipe the oil using a clean paper towel.
