Gluten Free Bechamel Sauce Recipe (Basic Gluten Free White Sauce)

Bechamel Sauce Without All-Purpose Flour

One can use this gluten free bachamel sauce (pronounced “bay shoe mel) as a base for any cream sauce. You may add spices, or pureed roasted red peppers, cheese, and more. Often times, when using potato starch to thicken sauces it tends to thin when reheated. I used tapioca starch in my old recipe, and now a new thickener that stays thick. What will you use to flavor this sauce? Be creative! Make a chili bechamel and stuff some crepes with ground beef and sauteed onion and peppers. This sauce really is a blank canvas. Gluten Free Vol-au-Vent for Sweet or Savory Recipes

Image: Gluten Free Vol au Vent

A vol-au-vent is a French pastry which is made from layers of puffed pasty, hallowed out and filled with anything from sweet to savory. This gluten free vol-au-vent is stuffed with peach pie filling, however, you may fill it with something savory which contains a little sauce or moisture, such as a seafood mousse, chicken pot pie filling, etc. How this recipe came about was when I stumbled upon a recipe for vol-au-vent, and just had to make a gluten free version. While this recipe turns out a crust similar to pie crust, it can be made with my new flaky gluten free phyllo dough. This gluten free vol-au-vent recipe allows you to be creative. You can shape them into hearts for Valentine’s Day or four leaf clovers for St. Patrick’s Day. You can scallop the edges or whatever you desire. Give it a try. And I bet your guests will never know they are made from a gluten free recipe! Continue reading “Gluten Free Vol-au-Vent for Sweet or Savory Recipes”

I had plans on making gluten free macaroni and cheese and then had the idea that adding some broccoli would be a great combo. Then I got carried away and decided to through the some chicken breast fillets in at the bottom of the baking dish. It made the chicken very moist, and delicious. I hope you enjoy this recipe. Last night my hubby and I definitely did! I look forward to making this with various left over meats and veggies. What will you use? Gluten Free Bagels

Homemade Gluten Free Bagel

This gluten free bagels recipe turned out very light – delish! – closer to a bread, but may be made heavier by using 1 less egg white. I created a Whole Grain Gluten Free Bagels recipe a few months ago, but needed to perfect a bagel recipe for an upcoming video I am doing for eHow.com. (They’ve invited me to be gluten free recipe talent for them!) I decided to use flour and starches that were readily available to all and that were inexpensive. Future versions may contain different flours. Though not perfected yet, in the sense of smoothness on the outside, they turned out light, which was what I was going for. Newer bagel recipes contain holes, which you never used to see before. I think I’ll try rolling out the dough next time which should create a smoother finish. Meanwhile, enjoy these gluten free bagels. I enjoyed mine toasted. Yum! Continue reading “Gluten Free Bagels”

Twisted Yeast-Free Gluten-Free Breadsticks with Cheese

Image: Soft Gluten Free Breadsticks

These gluten free cheese breadsticks taste cheesier than the usual recipes because they are rolled in cheese, with only a little cheese inside. I have found that even if I quadruple the amount of cheese inside, you still do not taste as much cheese compared to these. This particular recipe can be twisted which makes for a more elegant presentation. Similar to pizza crust, they are crunchy on the outside and doughy on the inside. You may bake them for a shorter time if you wish your gluten free cheese breadsticks softer. Since my husband approves, and he eats gluten, he’s the best to judge. He loved this recipe the best. He dipped them in pizza sauce as an appetizer. I’m sure Super Bowl Sunday he’ll be asking for this gluten free recipe. Enjoy! My hubby sure did! You can substitute the oat flour for sorghum flour. I have used both flours and they come out wonderfully. The video below is meant to give you a bit more reality on the recipe, how to beat the egg whites, and more. Enjoy! And let me know if you have any questions about this gluten free bread recipe, or any other, by leaving a comment below. Enjoy!

Gluten Free Pizza Rolls

This gluten free pizza rolls recipe is handy for any party, or just for a snack. The dough is much like pie crust, and can be filled with any filling you desire. I used a mixture of homemade gluten free pizza sauce and shredded mozzarella cheese. With what will you fill your gluten free pizza rolls? I think I will make mine larger next time so that I can add more filling. Yum! Enjoy! Continue reading “Gluten Free Pizza Rolls”

Gluten Free Appetizer: Honey Chicken Wrapped in Bacon

This gluten free appetizer was a huge hit in our house! So yummy! They disappeared before they had a chance to cool off. The chicken remains moist and the bacon is crisp. Savor the slight smokiness of paprika and sweetness of honey. I couldn’t ask for a better appetizer. This makes a great gluten free appetizer for any guest (on a gluten free diet or not), or for any special occasion. Any day could count. Right?

Chestnut Cinnamon Gluten Free Pancakes (Dairy Free and Egg Free)

I needed to create a recipe to use up some aging flours. I thought, “Why not a gluten free pancake recipe?” There must be thousands of variation of pancakes, but I chose one I thought was unique, in that it did not contain any eggs or gum. That did not work out very well, therefore I adapted it. The recipe originated from one of Nutsonline’s Gluten Free Pancakes recipes. They were delish and I feel that they are a bit more healthy than a typical recipe. These were delish, and are dairy-free and egg-free! Enjoy!
