She’s been gone for some years, but it brings me comfort and makes me smile every time I make this dish. Kids tend to not like them very brown, but by all means brown them up as much as you desire. Vegan and Gluten Free Stuffed Zucchini Recipe

I have been craving an old recipe of mine that I no longer can have due to my tomato allergies, but created this one as a substitute. There a ton of variations to this recipe which is great because you’ll never tire of it. You can either keep it vegan or add meat, cheese, etc. You can use traditional shaped zucchini or round ones if you can get a hold of some. The one I used in the photo below is from my garden. Gluten Free Watermelon Smoothie

The other day I was watching the Paula Deen show and she made water melon coolers. I happened to have had a huge watermelon that I had planned on using when I had company, but didn’t. Making a watermelon smoothie was a perfect way to consume the watermelon fast and watermelon is a great diuretic. I am allergic to citrus so I skipped the lemon juice, but wish I could have used it. But even without the lemon juice, these are

great! And if you choose to add Greek yogurt, it will assist those with candida, though they should avoiding sugary drink. Paula used watermelon, lemon juice and a big scoop of lemon sorbet. Lemon juice is also a great diuretic. I don’t recall her portion sizes on ingredients, but you can’t go wrong with this smoothie recipe, as it is very forgiving. I used Greek yogurt and pineapple juice, but you can use just about anything creamy with any juice you wish. Suggestions for creaminess are: vanilla ice cream, flavored yogurt, whipping cream, etc. All you need is a blender. Enjoy this refreshing watermelon smoothie! I was watching Chef Emeril Lagasse on The Martha Stewart’s Show and he had my mouth watering when he made a corn cake, similar to a polenta cake, often made in restaurants as a side dish, topped with stewed cherries. I was determined to make my own gluten free version, but healthier. I made it with blueberries; without refined sugar, and sweetened it with applesauce and a tiny bit of agave syrup; used one less egg and added applesauce instead of sugar and lemon zest, making it like a bread pudding. I was watching Paula Deen the other day and her son was on her show and made stuffed strawberries with cream cheese and powdered sugar. I made them, too, as a gluten free sugar-free recipe! I can’t think of anything that I would enjoy more on a hot summer day, and did! I had so much fun testing this recipe using different sweeteners. I didn’t care for them with agave but enjoyed them with powdered sugar and stevia. Surprisingly, I liked these strawberries better with stevia. I hope you enjoy these, too! Stop the presses! This is my all time favorite out of all of my gluten free soup recipes! I love anything with bacon, but try to not eat it too often, as most of them contain many preservatives, not to mention the calories. I love avocados and I thought, “Why not mix it up with chicken for an avocado chicken salad sandwich or atop a salad?” I allow myself a serving of avocado once a week, as a treat. Adding a little Greek yogurt makes this recipe even less in calories, or use mayonnaise for richness, or neither. This is a quick, easy avocado chicken salad recipe that anyone can make. Low Fat Baked French Fries

Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise form the bottom through holes in the pan, allowing browning to occur on both sides. A little olive oil spray makes them taste like regular french fries. UPDATE: I have successfully made these using a regular baking sheet. Gluten Free Maple Rice Pudding Recipe

Maple Sweetened Gluten Free Rice Pudding

I had quite a bit of leftover white rice and happened to see a restaurant featured on television that shared a portion of their ingredients for rice pudding except for one secret ingredient. And it is naturally gluten free. It looked as if it contained warm maple syrup; and the host of show said it tasted like french toast. I just had to try to make it. The original recipe did not use vanilla bean but I had to add some, as vanilla beans give it a wonderful flavor! I hope you enjoy this as much as I enjoyed creating, and consuming it.
