Gluten Free Chocolate Chili

You heard it right, chocolate chili! I also threw in some bacon. I love to keep my guests guessing what the ingredients are in this chili. My daughter made a similar chocolate chili recipe, and she won an award for it. Unfortunately, for me, it contained tomatoes. Being allergic to tomatoes, I created my own chocolate chili recipe, gluten-free of course. You can top this chili with cheese and/or gluten free bacon bits. I over cook some bacon to garnish the top and then add additional juice from the chili on top. It gives it a nice sheen, yet leaves the crunch for added texture. Zucchini Hash Browns

Several weeks, perhaps months, ago, I created a combined zucchini and potato hash brown recipe. Since then, I’ve been wanting to try just zucchini hash browns. The opportunity presented itself, as someone gave us a giant zucchini. It must have been 2 feet long and 6 inches wide. There isn’t much to this recipe, but it sure is delicious…and much healthier than your typical hash browns. In addition, it is much lower in carbs than regular hash browns! Stove Top Chili Fries Recipe: Spicy or Mild

I was thinking about whipping up some of my Indian fries with turmeric, but had decided to turn this into a gluten free chili fries recipe. You may add cheese or not, however, these are very tasty on their own. The mustard is the key, here. Any of the spices, other than chili powder, such as cumin and red peppers can go to the wayside if making this for children. Gluten Free Falafel with Cucumber Sauce

Falafel, which are popular in the Middle East, is now served all over the world as a replacement for meat, normally have a cake-like texture to them, similar to doughnuts. The texture of this gluten free falafel is something you’ve probably never experienced before, but both my husband and I really enjoyed this. I normally would have cast this recipe aside because it is not the traditional texture inside, but we enjoyed it more than the usual. It has a creamy, almost bean-like texture inside and crispy on the outside. I added a few unusual ingredients, and I am really glad that I did. I hope you enjoy my new version of gluten-free falafel. In an effort to add more vegetables to my diet, I am finding more and more ways of either hiding them or adding them to standard recipes. Homemade hash browns do not take much longer to cook than the frozen kind. The only extra work is in peeling them. However, they don’t turn out as crispy as frozen do. Fresh Fruit Heals Leaky Gut

The best recipes for a leaky gut contain whole foods (unprocessed foods), but some in particular. Perhaps you’re sick of fruit and are now going for those high carb snacks. I think we all have gone through the feeling of being deprived when we first start a gluten free diet, though once you find your favorite brands of gluten free baked goods, including bread, all hell breaks loose on the scale, at least those of us who have healed already. This is why I have been concentrating on finding a more healthy gluten free snack. Though I don’t ever think I’ll give up perfecting gluten free baked recipes. Everything in moderation, right? So, while your gut is still healing, ditch those high carb baked goods and reach recipes for leaky gut such as those containing high complex carbohydrates: legumes (if tolerated), fresh vegetables and fresh fruit. Fried Colored Potatoes and Onion

This dish is not only attractive, but very tasty, and naturally gluten free. If you are used to frying or roasting potatoes, adding a bit of chopped onion and/or garlic provides quite a bit of flavor. However, all three of these potatoes tend to have more flavor than brown/russet potatoes. Using colored potatoes is also very attractive in potato salad, as well. I picked up a very small bag of baby colored potatoes at Trader Joe’s. If you have one locally, you may want to check there if you can’t find them in your local supermarket. Gluten Free Vegan Casserole with Artichoke Hearts

When my husband isn’t home for dinner, I often just throw any ingredients in a pan and go for it. I don’t need meat every night. This is my favorite out of all of my gluten free pasta recipes, and it happens to be gluten free vegan. The other night I went in my pantry for dog food when I spotted a jar of artichoke hearts and immediately thought of some with pasta, along with red bell pepper. The rest is history. I used just about every Italian ingredient I could get my hands on in my kitchen to create an authentic gluten free Italian recipe. It’s something that I knew must already exist; however, I had no name for it. That’s all I knew was I would be happy to pay for this in a fine restaurant as a main dish. The days when my children were young and they would beg for Rice-A-Roni have been gone for sometime, but the good memories linger on. During my grocery shopping this week, I passed by the Rice-A-Roni shelves and thought back. Realizing I had no idea what the ingredients were in it, and was afraid to look. Besides the things I could barely pronounce, I realized some people may miss it. I not only wanted to create a gluten free Rice-A-Roni-style recipe, but a healthier one. I definitely need to create a new gluten free rice recipe soon, anyway. This is a great way to get kids to eat broccoli, as they won’t recognize the taste buried in the other flavors. Gluten Free Chicken Shirataki Noodle Salad in Lettuce Cups

Gluten-Free Asian Chicken Noodle Lettuce Cups

If you’re looking for a light, quick, yet elegant meal, look no further! Shiratiki noodles contain very little carbs, therefore, this is great for a gluten-free low-carb diet, and those with diabetes. I needed a meal in 30 minutes or less, therefore, I did not marinate the chicken, but should I have had time, I definitely would have, though calories are saved by not doing so. I’ve added how to marinate the chicken at bottom of this page. You can add vegetables to this recipe such as green bell pepper or parboiled carrots, etc., and saute them along with the chicken. This is a gluten free recipe that I would serve anyone – gluten-free dieter or not! This is my favorite out of all of my shirataki noodle recipes. The other is used in a soup. Enjoy!
