I had a few packages of Full Flavor Gluten Free Alfredo Sauce on hand. When I made it, it lacked the richness and flavor compared to the one I usually make from scratch. However, the usual recipe calls for heavy cream. I didn’t have any on hand, but doctored up this package into what I thought was better than any other one I’ve had. It turned out, I couldn’t eat anymore after tasting it as it contains tapioca, to which I am allergic. However, my hubby who usually prefers spaghetti sauce over Alfredo has been enjoying it for lunch and dinner. Continue reading “Gluten Free Alfredo Sauce Without Cream”
Easy Gluten Free Cheese Souffle
Souffles tend to scare people because they’ve heard they fall often. There are tricks to creating the perfect souffle. Besides having the correct ratio of ingredients, you need something dry to coat the ramekin/container you bake it in, to which the egg mixture will adhere. In this case, I use flour; however, you can finely ground gluten free bread crumbs, if desired. So, don’t be intimidated. Meanwhile, enjoy this delicious gluten free cheese souffle. Gluten Free Fixings for a Potato Bar + Perfect Baked Potato
Here is an easy recipe for any event. Make a baked potato bar. You can have everyone make their own. All you have to do is supply the hot, baked potatoes. Rather than stabbing them and microwaving them, or just plopping washed potatoes in the oven, go one step further and make these. If you typically bake potatoes on 450°F, like I used to do, you’ll discover a new temperature that achieves better results. Enjoy! I know you and your guests will. Gluten Free Hush Puppies
Do you enjoy cornbread? Do you enjoy donuts? If you answered yes to both of these questions, you’ll enjoy these gluten free hush puppies, even more. These babies are delicious served with just about anything. However, try pairing them with seafood or something spicy for a southern flare. They are moist and make a wonderful snack, as well. Though they contain plenty of onion, the onion is sauteed first to sweeten them up. This avoids the use of tons of sugar. Ahhhh…just amazing! Continue reading “Gluten Free Hush Puppies”
Easy Gluten Free Scalloped Potatoes Recipe in Crispy Cups
I made these last weekend and my husband and I thought we died and went to heaven. We don’t usually react this way unless something contains bacon, but these scalloped hash brown potato cups are truly to-die-for. The creamy potatoes with their seasoned and crisp bread crumb coating is incredible. Using frozen hash browns makes this recipe easy. I don’t think I’ll make my traditional gluten free scalloped potatoes recipe again. I’m looking forward to baking these ahead of time and then baking them again to rewarm for guests. This will make them extra crispy. Enjoy!
Note: I will be working on a dairy-free version soon. Stay tuned in! Continue reading “Easy Gluten Free Scalloped Potatoes Recipe in Crispy Cups”
Gluten Free Cheese and Spinach Gnocchi
Tuesday is National Cheese Lover’s Day. So, I thought I would share my latest gluten free recipe with you that contains cheese. It doesn’t contain everyday cheese, but either cottage cheese or ricotta cheese (which looks a lot like cottage cheese, but has smaller curds). It’s delicious!
IÂ used 4% fat cottage cheese and chopped the curds up a little smaller. However, it appears pureeing it in a food processor would make it easier to roll. I also used Parmesan cheese in this recipe. I adapted the same recipe that I found in this month’s Sunset magazine. However, I use much less Parmesan and of course, gluten free ingredients instead of glutenous all-purpose flour. Meanwhile, you’ll have fun learning how to roll the gnocchi, which is the best way to make them. It leaves a nice sized space in which the sauce is trapped. When they are rolled, they are also less chewy. Check out the video on how to roll gnocchi. Continue reading “Gluten Free Cheese and Spinach Gnocchi”
Gluten Free Beef Stir Fry with Broccoli (Lower-Fat Option)
During a visit at PF Chang’s, our waitress stated that most of the entrees are over 1,000 calories. It was hard for me to imagine, but after learning how to stir-fry the authentic way, I now understand. If you want amazing flavor in your stir-fry meat, use lots of oil. I have provided an authentic recipe below, but feel free to use less oil to reduce calories. Continue reading “Gluten Free Beef Stir Fry with Broccoli (Lower-Fat Option)”
Easy Gluten-Free Dairy-Free Mashed Potatoes (or Traditional)
This gluten-free dairy-free mashed potatoes recipe is not only easy to make but is delicious; and is made completely allergen-free. They are made without dairy, casein, soy, nuts, or any of the eight major allergens. Instead of peeling the potatoes and cubing them, you boil them whole and the peel just slides off. The main thing is you don’t have to sacrifice on taste. If you are not allergic or intolerant to any of these ingredients, feel free to use butter and cow’s milk. Have I died and gone to heaven? Yes. I have, and so can you. This indulgent side dish is definitely something to splurge on during the holidays. Don’t worry. We’ll diet come January. The rich, creamy, wine sauce makes this dish, alone. Then add bacon and your taste buds are dancing on the roof of your mouth and tongue. All made without cheese. Enjoy these gourmet, stovetop, gluten free scalloped potatoes any time of year. Add poultry or meat, if desired. Continue reading “Gourmet Stovetop Gluten Free Scalloped Potatoes”
Gluten Free Pumpkin Mac ‘n’ Cheese with Optional Bacon
Similar to it’s baked cousin, this gluten-free macaroni and cheese recipe contains a bit of both pumpkin and cheese, but is made without egg. The pumpkin provides accents of fall and a bit of sweetness. The leeks or onions are used as a substitute to add sweetness and savoriness. Best of all, the optional bacon makes everything taste even better. No matter how you choose to make this dish, everyone will be begging for more.
