Gluten Free Alfredo Sauce Without Cream

I had a few packages of Full Flavor Gluten Free Alfredo Sauce on hand. When I made it, it lacked the richness and flavor compared to the one I usually make from scratch. However, the usual recipe calls for heavy cream. I didn’t have any on hand, but doctored up this package into what I thought was better than any other one I’ve had. It turned out, I couldn’t eat anymore after tasting it as it contains tapioca, to which I am allergic. However, my hubby who usually prefers spaghetti sauce over Alfredo has been enjoying it for lunch and dinner.

Quick Gluten Free Alfredo Sauce

Yield: Makes about 6 servings as a side dish

Quick Gluten Free Alfredo Sauce

A quick, yet decadent, side dish, gluten free alfredo mix doctored up. It's so good, you'll swear it contains fresh cream.

Ingredients:

  • 1 box 12 oz. Schar's Tagliatelle Italian Pasta or 9 oz. Jovial Tagliatelle
  • 4 quarts water
  • 1 teaspoon olive oil (or neutral-flavored cooking oil), for pasta water
  • 1 package Gluten-Free Full Flavor Alfredo Sauce Mix
  • 1 cup water
  • 2 Tablespoons milk (or more water)
  • 2 1/2 Tablespoons butter, gluten free margarine (Smart Balance)  (or Earth Balance, for dairy-free)
  • 1/4 cup freshly grated Parmesan cheese (or Kraft shaker)
  • 1/8 teaspoon salt
  • 1/8 ground black pepper
  • Cooked gluten free ham, thick bacon or pancetta, or chicken breasts, diced

Instructions:

  1. Bring 4 quarts of water to a boil. Add oil and then pasta. Stir and lower heat medium. Stir occasionally and keep at a low boil. Cook 8 to 9 minutes and drain. Rinse pasta under cold water while in a colander to stop the cooking processing. Set aside while you prepare the sauce.
  2. To the same pot, add 1 cup water, milk, margarine, Alfredo Sauce, Parmesan, salt and pepper. Stir until combined and butter melts. Cook on medium-low heat for about 2 minutes or until creamy. Add pasta, and meat, if using, toss gently, and serve immediately topped with additional grated Parmesan, if desired.

Tips

The entire package of mix only contains 160 calories. Therefore, what you add to it, it should be in conjunction with your dietary restrictions, if any.

Ingredients in Full Flavor Gluten Free Alfredo Mix: Parmesan cheese (pasteurized milk, salt, cheese culture, enzymes) non-fat dry milk, modified tapioca starch, salt, hydrolyzed corn protein, spices, yeast extract, citric acid, caramelized sugar.
