Gluten Free Almond Flax Pancakes

On behalf of my paleo diet friends, I created this gluten free pancakes recipe which is grain free and sugar free. Of course, this doesn’t prevent anyone else from dowsing it with maple syrup. Another alternative, which is what I did, is to dust them with organic powdered sugar (evaporated cane juice). I get mine from Trader Joe’s. These are gluten free, sugar free, grain free, dairy free, corn free, and soy free. These are ideal for those looking for gluten free diabetic recipes, as well as paleo. Enjoy! I had a request for an egg free gluten free bread and decided to create this one. Though it is not dairy free, you may be able to experiment with it on your own. In deciding in which direction to take, I ran across a gluten free buttermilk bread recipe which only called for starches, and no need to rise, though it contained yeast. I was very curious how this would turn out. I tweaked it a bit before experimenting and ended up with what I believe to be the most flavorful white gluten free bread yet. I did not allow it to rise, though next time I definitely will, as it is just a bit heavy, but perfect for a French loaf or rolls. I didn’t care for the heavyweight in the sliced loaf, though it is definitely kid-friendly. Fresh out of the oven, it is to die for! The French loaf crust was a bit crunchy and the crust on the rolls was soft. Enjoy!

I have been wanting to create a gluten free vanilla wafers recipe for sometime now. It’s finally here. Now, you can make that banana cream pie or banana pudding you used to make. This recipe was adapted from Food Network’s Chef Alton Brown’s recipe for Vanilla Wafers. They are just wonderful. I’m thinking of replacing my gluten free milano cookies recipe for this recipe instead. Whether you make them bite size or regular size, they are a treat. They brought back some great memories from when I was young, as well as when my kids were young. There are a couple of variations which you can check out below in the Tips area. Flourless Cookies – Pine Nut Cookies

Typically Italian Pine Nut Cookies are made with marzipan or almond paste, however, you may use almond flour / almond meal, ground up, or even ground up pine nuts, as I did. You grind it to the consistency of any nut butter. Flourless cookies are wonderful, usually high in protein, thus lower in carbs. However, carbs still exist in the sugar. You may wish to use a natural sugar substitute, such as birch derived xylitol, if you are watching your carbs closely. Meanwhile, enjoy this pine nut cookies recipe. I definitely did. Gluten Free Lasagna – Chicken Spinach with Creamy Basil Sauce

My experiment for an easy gluten free ravioli turned south. So, I decided to use the filling to layer a gluten free lasagna recipe instead. It really tastes no different than a ravioli, just bigger. This was so delicious! And you’d never know it contained chicken. I’ve included dairy-free, vegan, vegetarian options. If you’re not a spinach fan, use another green such as fresh basil, or even arugula. And of course, the filling may be used for stuffing ravioli, as well. Just refrigerate it until chilled.
