Caramelized Red Onions with Balsamic or Red Wine

Using balsamic vinegar, you can make these delicious and sweet caramelized onions though you can use merlot (as I did – as shown) or other red wine. I call my version Merlot Caramelized Onions. It really depends on your tastes and how you will be using them. Use vinegar if you prefer a little tang. It doesn’t have to be balsamic. You can even do a little both and use red wine vinegar. Both versions are great with steak, chicken, or even mixed with vegetables. I would even add a few to top a salad.

Out of eggs? You can still make this delicious gluten free mayonnaise cake because mayonnaise contains eggs! No additional eggs are needed. Mayonnaise makes moister cakes. Just be sure to use a recipe like this one that has strong flavors like chocolate, cinnamon, lemon, etc. They mask the lemon or vinegar in the mayonnaise. Meanwhile, you can use a 9 x 9 or 9 x 13-inch dish to make this cake. So good!

Joanna Gaines, the former costar of the Fixer Upper TV show, made a similar cookie recipe last week on Good Morning America. I just had to have them because they sounded and looked so good. You will love these gluten free chocolate chip oatmeal cookies. It’s like three cookies in one. Before I ever made them, my husband said, “They’re just going to be missing raisins!” (He’s a huge raisin oatmeal cookie fan.) These cookies contain both chocolate and peanut butter chips as well as oats. They’re our new favorite cookie!
