Dairy Free Parmesan Cheese Recipe – Vegan Cheeze

If you are on a dairy free diet or just don’t have any Parmesan cheese on hand, this dairy free Parmesan cheese recipe will get you by just fine. It’s a little salty, a little cheesy, and just right for a Parmesan substitute. I’m sure you’ll love it. I like it better than Parmesan! It makes the perfect garnish or flavor enhancer.

Lactic Acid Powder – Lactic acid provides a bit of a sour, fermented/aged flavor to this dairy free Parmesan cheese. Also use it make wonderful Dairy-Free Buttermilk instead of using vinegar or lemon juice.)

Dairy Free Parmesan Cheese Recipe – Vegan

Make your own dairy free Parmesan cheese that is healthier than its dairy counterpart yet tastes delicious and cheesy too!

Ingredients

  • 3 tablespoons roasted cashews or more walnuts, if that’s all you have
  • 2 tablespoons raw walnuts
  • 4 teaspoons nutritional yeast large or small flakes
  • 1/16 lactic acid powder optional
  • 1/32 teaspoon salt or less to taste

Instructions

  1. Add the both nuts to you chopping board and mince until you have 3 tablespoons roasted cashews and 2 tablespoons walnuts. Alternatively, you can add them both to a grinder that is not use for coffee. Do not over-process or you will make nut butter instead.

  2. Add the nutritional yeast, lactic acid (if using) to the minced nuts and cut them or grind them together.
  3. Taste, and if desired, add a tiny bit of salt, a tiny bit is important if you are using lactic acid powder. Use to top pasta, pizza, mac & cheese, to make pesto sauce, garnish vegetables, and more. You can use this faux Parmesan cheese for anything that doesn’t require the “cheese” to melt.
