A decadent chocolate mousse fills a crunchy chocolate crust, topped with lightly sweetened whipped cream and chunks of crunchy cookies. Make the crust in advance so you can breeze through making the filling and topping the following day. My gluten-eating neighbors went crazy over this pie! Gluten Free New York-Style Pizza with a Thick or Thin Crust
I have been pretty happy with my gluten free grilled pizza as a decent substitute for the lack of gluten, until now. This latest masterpiece (yes, I’ll toot my own horn here), is amazing! It has an artisan bread texture and creates the traditional cracks on the bottom of the crust, just like New York-style pizza. Grilling or using a pizza stone (if not both) is ideal for creating a gluten-like texture, which gives off a gluten-like flavor. I have been waiting to have a light bulb moment, and I finally did. Gluten-Free Allergen-Free Devil’s Food Cake
While developing recipes for my cookbook, I created a traditional Copycat Betty Crocker Devil’s Food Cake Mix recipe. At the time, I wasn’t sure on the theme of my cookbook. I thought I’d give an egg-free version a try. My husband who loves devil’s food cake enjoyed it as did I. The one recipe tester who tried it did not use a mixer, which would have made it lighter. She just mixed it all up in a bowl. As you can see in her photo, it still looks delicious, but a little dense. She really enjoyed it, even though she is not on an egg-free diet. She rated it 10/10 in texture, 9/10 in flavor, and 10/10 in appearance. Her husband thought it was too moist. Meanwhile, I hope you enjoy it as much as we did.

Copycat Betty Crocker® Gluten Free Devil’s Food Cake Mix
Moist devil’s food cake is one of those desserts that you say you’re just going to have one bite, but you end up finishing the entire piece. This cake is no different, even when made dairy-free. It was rated highly by my recipe testers for my upcoming cookbook, “Carla’s Best 125 Gluten Free Recipes“. See the Tips section for a chocolate version.

Gluten Free Shortbread Thumbprint Cookies
Even on a diet, I don’t deny myself goodies. Just one of these delicious shortbread cookies can go a long way. Shortbread cookies are made to almost fall apart when you bite into them. However, I like them a little firmer than that. I think these are just perfect. The jam is just icing on the cake*! No. It’s jam on the cookie! Gluten Free Chicken Kebabs – Kabobs with Honey Marinade
One of my Facebook followers requested a recipe for a sweet and sticky chicken kebab / kabob marinade. Honey or sugar and some liquid can create stickiness, but honey or agave is the best. Gluten-free barbecue sauce would also work if that’s all you have on hand. However, honey or honey and mustard are awesome. It’s great due to my tomato allergies. In this recipe, I use lots of black pepper. Depending to whom I am serving it to, I may even add a little gluten free chipotle or hot sauce. Yum! Let me know how you like it.
