I really needed a smaller size carrot cake, as my famous Gluten Free Carrot Cake Recipe is a bit too much for us lately. Using a 9-inch round pan versus an 8-inch makes for a lower cake, which fools us psychologically into thinking we’re still having a large piece. The main thing I changed in this new gluten free carrot cake recipe is making a smaller batter and making it moister and spicier. There was a bit too many crumbs on the recipe in the above link. This time, it’s perfect. A matter of fact, it is so good, you don’t even need frosting. It’s plenty of sweet and extremely moist. I used lots of ground cloves which I really enjoy and I think you will, as well. It tastes closer to pumpkin bread. If pumpkin spices are not your cup of tea, omit the cloves. Enjoy! Single Serve Gluten Free Microwave Bread
Back in 2013, I created a Single Serve Dairy-Free Gluten-Free Yeast-Free Bread for Microwave. It tasted a bit too eggy, but was good in a pinch. I recently experimented with a dairy version using apple cider vinegar, a different flour blend, and omitted sugar or honey. It turned out much closer to the texture of starchy white bread like Wonder Bread. For a quick, single serve gluten free microwave bread recipe, it is pretty amazing. Gluten Free Alfredo Sauce Without Cream
I had a few packages of Full Flavor Gluten Free Alfredo Sauce on hand. When I made it, it lacked the richness and flavor compared to the one I usually make from scratch. However, the usual recipe calls for heavy cream. I didn’t have any on hand, but doctored up this package into what I thought was better than any other one I’ve had. It turned out, I couldn’t eat anymore after tasting it as it contains tapioca, to which I am allergic. However, my hubby who usually prefers spaghetti sauce over Alfredo has been enjoying it for lunch and dinner. Continue reading “Gluten Free Alfredo Sauce Without Cream”

Butterscotch Custard Recipe
While not all ready-made or boxed pudding brands are gluten free, you can always use naturally gluten free ingredients to make them from scratch. Instead of making gluten free pudding, which contains flour, I prefer custard. There isn’t any floury taste or texture in custard because it does not contain flour. While this may not occur in pudding with wheat flour, it does in gluten free pudding. In addition, gluten free flour creates a bit of slimy texture in pudding (too thick). Custard really is the way to go. Serve this rich butterscotch custard plain or topped with caramel sauce and/or whipped cream. It’s so decadent! Continue reading “Butterscotch Custard Recipe”
Gluten Free Buttermilk Pancakes Recipe
Making these moist and fluffy gluten-free buttermilk pancakes couldn’t be easier. Add berries or fruit, if desired, or top with your favorite fruit and pure maple syrup. Continue reading “Gluten Free Buttermilk Pancakes Recipe”
Easy Gluten Free Cheese Souffle
Souffles tend to scare people because they’ve heard they fall often. There are tricks to creating the perfect souffle. Besides having the correct ratio of ingredients, you need something dry to coat the ramekin/container you bake it in, to which the egg mixture will adhere. In this case, I use flour; however, you can finely ground gluten free bread crumbs, if desired. So, don’t be intimidated. Meanwhile, enjoy this delicious gluten free cheese souffle. Crunchy Baked Gluten Free Onion Rings
Bake onion rings for those you love! If you have about 45 to 60 minutes, you must try these crunchy, baked gluten free onion rings. I not only bread them in gluten free breadcrumbs, but I enjoy adding Italian seasoning and grated Parmesan cheese. Seasonings are optional, though. The method of this recipe is so successful at creating crunchy onion rings, that you’ll swear they are deep-fried. If you do prefer fried onion rings, see Chef Robert Landolphi’s Tri-Spiced Onion Rings and Dipping Sauce Recipes. They’re super! Continue reading “Crunchy Baked Gluten Free Onion Rings”
Gluten Free Strawberry Cake Mix Cookies – Oreo-Style
Shortly after I published my new copycat recipe for Betty Crocker’s Gluten Free Yellow Cake Mix, one of my Facebook followers asked if I could adapt a Strawberry Cake Mix Heart-Shaped Ore-Style Cookie Recipe to gluten free. I found the same exact recipe published on Thirty Hand Made Days Blog. I immediately went to work on adapting my yellow cake mix into a strawberry cake mix. Skinny Gluten Free Chocolate Cake
I created this gluten free chocolate cake recipe with coconut flour when I received a sample of CooKoo for Coconut Organic Flour. My first thought was that one sure way to think healthy and skinny is to increase the fiber in your diet and consume healthier fats. Coconut flour is the perfect way to do both. A matter of fact, when you bake with coconut flour it is so packed with fiber, it acts like a sponge and absorbs much of the liquid. Therefore, you cannot substitute it cup for cup with gluten free all-purpose flour, but you can definitely replace up to 50% with little adjustments, and less with no adjustments at all.
