Back in 2013, I created a Single Serve Dairy-Free Gluten-Free Yeast-Free Bread for Microwave. It tasted a bit too eggy, but was good in a pinch. I recently experimented with a dairy version using apple cider vinegar, a different flour blend, and omitted sugar or honey. It turned out much closer to the texture of starchy white bread like Wonder Bread. For a quick, single serve gluten free microwave bread recipe, it is pretty amazing.

Ingredients:
- 1/3 cup Carla's Gluten Free Flour Blend (using cornstarch instead of tapioca flour)
- 1/4 teaspoon gluten free baking powder (Rumford's)
- 2 Tablespoons water
- 1 1/2 Tablespoons non-fat dry/instant milk
- 1 large egg
- 3/4 teaspoon apple cider vinegar
Instructions:
- In a small bowl, whisk together the flour and baking powder; and set aside.
- In a separate bowl, whisk together the water, non-fat dry milk, egg, and vinegar.
- Create a well in the flour mixture and add the wet mixture. Whisk slowly in the middle of the egg mixture until a thick batter forms.
- Pour the mixture into a bowl, microwave-proof bowl and distribute evenly.
- Microwave for about 1 minute or until set. Add 5 second intervals, as needed, if you have a lower than 1200 watt microwave.
- Remove the bread from the container and transfer it to a wire rack to cool completely, about 10 minutes. Slice in half and use to make your desired sandwich or toast.
