Gluten Free Lasagna – Chicken Spinach with Creamy Basil Sauce

Image: Gluten Free Lasagna with Spinach

My experiment for an easy gluten free ravioli turned south. So, I decided to use the filling to layer a gluten free lasagna recipe instead. It really tastes no different than a ravioli, just bigger. This was so delicious! And you’d never know it contained chicken. I’ve included dairy-free, vegan, vegetarian options. If you’re not a spinach fan, use another green such as fresh basil, or even arugula. And of course, the filling may be used for stuffing ravioli, as well. Just refrigerate it until chilled.

If basil and spinach is not your thing, here’s my Traditional Gluten Free Lasagna Recipe.

Spinach Rice

Spinach Rice

This spinach rice dish may be made with an Indian flare or a Chinese flare. Either way, it’s delicious. I chose to hide the bitter taste of spinach in this recipe. No bitterness at all! If anything it tasted a bit creamy, though, it is dairy-free. For a Chinese flare, use gluten free soy sauce. For an Indian flare, use butter and turmeric. If not egg tolerant, or vegetarian or vegan, skip the eggs. This recipe is very forgiving on amounts and ingredients. Another gluten free recipe to add to your favorites in which you can get creative. Enjoy! Continue reading “Spinach Rice”

Gluten Free Mexican Casserole (TexMex)

GF Mexican Casserole

I was going to make pupusas which contain the same basic ingredients as this gluten free Mexican casserole, but you have to make patties out of the cornmeal and stuff each one individually, seal it up and then fry them. Being lazy, I thought, “Why not just make a one dish casserole?” And I’d prevent the higher fat fried food, as well! This dish can be made with leftover ground beef or bison, chopped chicken or turkey, tender chopped beef, and more. Add cheese to the mixture, or not. I added mine on the time to keep some form to the casserole. It was delicious, but the key is using black refried beans instead of regular. Enjoy! Gluten Free Taquitos or Flautas

Gluten Free Toquitos Recipe

I cannot tell you how many times, prior to be on the gluten free diet, that I had taquitos that were flavorless! Added garlic, chicken broth and chiles (skip the chiles for gluten free kids) make these gluten free taquitos very flavorful. My oldest sister, who is quite the culinary critic, loved these, evidenced by her second helping. You can make these corn free  by using gluten free flour tortillas (see my gluten free tortilla recipe or one brand of gluten free flour tortillas). These would then be considered flautas, not taquitos. Either way, they are delish! Continue reading “Gluten Free Taquitos or Flautas”

Gluten Free Potato Dumplings and Chicken

Gluten Free Chicken and Dumplings

Contemplating my next blog post recipe, I first asked myself, what would my husband enjoy that I have never made. Gluten free dumplings was my answer! Something starchy, with gravy would hit the spot on this cold, snowy winter’s day. However, I just could not imagine making a gluten free dumpling out of gluten free flour. It would just be a ball of starch. Therefore, I went with mashed potatoes. They make gluten free dumplings you’d be proud to serve your gluten eating guests. High Protein Gluten Free Crepes – Blintz – Cheese Rolls (Flourless)

Image: Gluten Free Crepes

I needed to create a cheese rolls recipe, often known as blintz, using tapioca flour starch for an eHow video and thought I would include dairy-free options. Though you may use cow’s milk for a creamier crepe, dairy-free milk or even water will work. I filled my crepe with chopped sauteed Swiss chard with garlic, a mixture of sauteed onion and red bell pepper, topped with a little Gluten Free Bechamel Sauce. Though these are high in egg, they do not taste eggy. Fill with anything sweet or savory. A crepe filled with cottage cheese is known in the Jewish community as a blintz. Others fill them with cheese and roll them up like a burrito around all sides and bake until warm. Usually, they are then topped with a fruit sauce. Gluten free crepes are like an empty canvas. Create away! Continue reading “High Protein Gluten Free Crepes – Blintz – Cheese Rolls (Flourless)”
