As they say, there’s more than one way to skin a cat. Oh dear! That’s actually a horrible analogy, but what it means is that there is more than one way of doing something or achieving a goal. In this instant, the goal is to have gluten free apple bread. Well, rather than making homemade bread containing apples, here, I added bread cubes, apples, and other ingredients to form an apple bread bake. You can use homemade or store-bought gluten free bread. Just be sure to use one that is absorbent. Drizzle or drown it in additional pure maple syrup for a luscious brunch dessert. Gluten-Free Egg-Free Peanut Butter Cookies
I am big on nut butter cookies. You can use peanut butter or almond butter, whichever you prefer. I have made Flourless Peanut Butter Cookies, Crunchy Peanut Butter and Coconut Cookies, Sugar Free Peanut Butter Cookies with Oatmeal, Chocolate Peanut Butter Cookies, Dairy-Free Peanut Butter Cookies Using Cookie Mix, and now, gluten free egg free peanut butter cookies with teff flour. They’re all wonderful and some are considered grain-free as teff and buckwheat are seeds, not grains. However, my all-time fave is Gluten Free Nutter Butter Cookies Recipe (Dairy-Free). Those are a bit more time-consuming than this new recipe. I enjoy this new one for its nutritional value, ease of preparation, and flavor. I hope you enjoy them, as well. They’re dairy-free, egg-free, and gum-free, to name a few. They are also grain-free as teff is a seed, not a grain. Continue reading “Gluten-Free Egg-Free Peanut Butter Cookies”

Well, this may be too much for some people for a single serving, while others think it’s just right. Either way, this gluten free sugar free brownie recipe is ideal for people who are the only one in their household on a gluten free diet. In addition, if you do not like keeping sweets on hand, it’s perfect, as well.

Copycat Gluten Free Trios Girl Scout Cookies (Flourless)
After tasting the new Trios Gluten Free Girl Scout Cookies, I knew those who were not able to find them in their area would have to taste these amazing cookies. I got right on it today. After several tweaks on baking times, height of dough, amount of invert sugar and butter, I finally did it. I knew on the last 2 batches that I baked, that I had achieved a copycat recipe of the Gluten Free Girl Scout Cookies, Trios! Again, I was thinking, “OMG!” I’ve only used that term twice on this blog, but they are truly amazing. When my gluten-eating husband gets home, he’s going to flip out with joy as he loved the Trios we purchased and they were all gone. Spiced Gluten Free Carrot Cake Recipe
I really needed a smaller size carrot cake, as my famous Gluten Free Carrot Cake Recipe is a bit too much for us lately. Using a 9-inch round pan versus an 8-inch makes for a lower cake, which fools us psychologically into thinking we’re still having a large piece. The main thing I changed in this new gluten free carrot cake recipe is making a smaller batter and making it moister and spicier. There was a bit too many crumbs on the recipe in the above link. This time, it’s perfect. A matter of fact, it is so good, you don’t even need frosting. It’s plenty of sweet and extremely moist. I used lots of ground cloves which I really enjoy and I think you will, as well. It tastes closer to pumpkin bread. If pumpkin spices are not your cup of tea, omit the cloves. Enjoy! Crunchy Baked Gluten Free Onion Rings
Bake onion rings for those you love! If you have about 45 to 60 minutes, you must try these crunchy, baked gluten free onion rings. I not only bread them in gluten free breadcrumbs, but I enjoy adding Italian seasoning and grated Parmesan cheese. Seasonings are optional, though. The method of this recipe is so successful at creating crunchy onion rings, that you’ll swear they are deep-fried. If you do prefer fried onion rings, see Chef Robert Landolphi’s Tri-Spiced Onion Rings and Dipping Sauce Recipes. They’re super! Continue reading “Crunchy Baked Gluten Free Onion Rings”

Stevia Sweetened Homemade Almond Milk Recipe
Up to a few years ago, I was making a homemade almond milk recipe created by Ani Phyo, date sweetened almond milk. However, due to its high carbohydrate content, I switched to unsweetened. Recently, I began adding a bit of stevia to the recipe. I finally found a brand that isn’t bitter, NOW Better Stevia. Now my almond milk is perfect!
Update: I also enjoy using Trader Joe’s Liquid Organic Stevia. Continue reading “Stevia Sweetened Homemade Almond Milk Recipe”
