Homemade Gluten Free Tortilla Chips

There’s nothing quite like warm homemade gluten-free tortilla chips! Fresh out of the oven, they are fragrant and more flavorful. Though these chips have plenty of flavor and heat (kick), as they are basted with olive oil and chipotle sauce. If you use plain hot sauce you may wish to add a a little sweetener (honey, agave, stevia, etc.) to the marinade. Gluten Free Hummus

mmuHummus is naturally gluten free, however, adding a wrong ingredient can send someone with a high gluten-intolerance into a world spin. This gluten free hummus is sweetened with pineapple juice and vinegar (due to my citrus allergies) rather than lemon juice, but feel free to use either. Hummus does not keep well. Therefore, ensure its refrigeration as soon as possible. I made some homemade gluten-free tortilla chips which was a wonderful compliment to this gluten-free hummus, as they were nice and spicy! Gluten Free Yellow Cake

I created this gluten-free yellow cake recipe in order to make a Gluten-Free Boston Cream Pie. Oh my – my fave! And if you make a large batch of my Gluten-Free Cake Flour Blend, then this is so easy to make! Of course, there are tons of things you can do with a gluten-free yellow cake, and I’m sure you already have your favorite in mind. You can add any type of filling or frosting. Enjoy!

A couple of months ago I was reading about Bob’s Red Mill’s steel cut oats recipe contest. I wanted to enter, but never found the time to do so. So, this is the recipe that I would have created for that contest. I had to share it with you, as it makes a healthier creme brulee or a scrumptious breakfast for special occasions such as a brunch! Walnuts or pecans, added along with banana slices make wonderful toppings, too. Add the brown sugar, torch and voila – you have yourself heaven! Rice with Basil and Candied Ginger Recipe

I searched for a candied ginger recipe online, but found mostly recipes on how to make candied ginger. So, I created my own! We really enjoyed this. I served it with gluten free chicken sausages made by Full Circle. They contain no MSG or nitrates which is very hard to find in a sausage. They have many other advantages, as well. I’ll see if I can get them to sponsor a giveaway. Meanwhile this rice and candied ginger recipe was wonderful. It’s not hot on the tongue, just a kick in the back of your throat. Gluten Free Pop Tarts – Style Pastries

Last month one of my Facebook friends asked me for a gluten free pop tarts recipe. I created this one for her. I filled one with chocolate ganache that I already had on hand, and the chocolate held up very well, even when fresh out of the oven. It did not ooze out of the pastry once cut. The others I filled with orange marmalade (the best!). Another I made sweet and savory by using a hot and spicy raspberry filling straight from a jar. The last I filled with a sweet walnut paste that I use in my walnut butter cups. Loved them all!

Quick and Easy Garlic Mashed Potatoes

Looking for a side dish that is fast, easy, tasty and good enough to serve to guests or your family? Why not speed up your regular process for mashed potatoes by adjusting 2 steps and make garlic mashed potatoes? So many of us have very busy lives and need ways of speeding up the cooking process. In addition, I keep hearing from some of my readers that they make instant mashed potatoes. Why not go the fresh route instead? You can make mashed potatoes for 4 in as little as 20 minutes, if you leave on the peel, otherwise about 30 minutes. The smaller you cut the pieces of potatoes, the faster they cook. And if you’re a garlic mashed potatoes lover, simply adding whole cloves of garlic to your potatoes while they boil will create creamy garlic mashed potatoes. Nut-Free Dairy-Free Egg-Free Gluten Free Candy Corn

Halloween is almost upon us and there are many parents who are looking for a gluten-free candy corn made in a facility without gluten and nuts. Can’t find one? Make your own! This recipe is an adaption of the Best Allergy Sites’ Peanut Free Candy Corn – Egg Free Gluten-Free Candy Corn Recipe to also make it dairy-free. I substituted the butter and dry milk powder with other ingredients, and removed the vanilla. Candy corn doesn’t usually contain vanilla, and if you use a dark vanilla it will change the color of the candy. Hope you have some kids to help you make this fun gluten-free Halloween candy! Gluten Free Finger Sandwiches – Cucumber Roasted Red Pepper Hummus

This wonderful gluten free finger sandwich recipe idea was contributed from Allison Windfahl, author of The Gluten Free Fat Loss Plan. Roasted red pepper hummus is one of my favorite dips! To have another red pepper hummus recipe idea is just grand! Allison did not include a recipe for the actual hummus, however one can easily be found on the Internet. My father is ill, and all of us daughters are taking very good care of him. I went shopping for him and came back with cauliflower, which he wasn’t too happy about. However, he said he would eat cauliflower soup. That was a perfect idea on a chilly San Francisco day.
