Q. What is the best gluten free (pure calcium if possible) that you purchase?
A. This is a great question, as those with celiac disease, are often on a dairy-free diet, as well as vegans, possibly creating a deficiency in calcium. Doctors may tell you that you need Vitamin D to absorb calcium, but the truth of the matter is that your body also needs magnesium when you take calcium. When you mix calcium gluconate and magnesium with a high enough acidity level (such as apple cider vinegar) your body will not only absorb it, it will absorb it quickly. Kinnikinnick asked me to review 6 of their newly repackaged gluten-free mixes. However, before I get to the review there are a couple of things you must note. Kinnikinnick is one of the largest gluten-free manufacturing facilities in the world! In addition, Kinnikinnick won the Every Day with Rachael Ray’s March 2011 gluten-free baking mix taste test in the pancake and waffle mix category! That says a lot! They make many gluten-free products, besides mixes. One of my friends raves about their products every time she passes by them in the Whole Foods’ refrigerator section! Katz Gluten Free, known for their scrumptious certified gluten-free breads and baked goods, came out with 2 new yummy treats in December! They added a vanilla flavor to their unique Rugelach. They also introduced Frosted Chocolate Cupcakes. They were generous to sponsor a gluten-free giveaway in exchange for my review of their products. My Katz Gluten Free products arrived with a sticker stating to freeze upon receipt. That is exactly what I did! That was at about 3pm.
Gluten-free Hamburger Buns
At about 7:30 I realized I hadn’t eaten dinner yet and was frantically looking for something fast to make. I thought, “Ground beef defrosts fasts, and oh yah! – I have gluten-free hamburger buns in the freezer! I took a bun out to defrost on the counter while I whipped up my favorite gluten-free burger recipe. I did not even have enough time and energy to make the balsamic reduction. I just whisked the balsamic, chipotle sauce and brown sugar together and combined with the red onion. No need for ground oats this time, as I had a nice filling hamburger bun awaiting! Perfect timing – it was defrosted by the time my hamburger was done!

Tasty Bite sent me a few of their gluten-free products. Tasty Bite made the 2009 list of best companies to work for in India! Their manufacturing facility is the largest and highest quality of its kind in India and is located in one of India’s richest agricultural regions. Their focus is on quality. They are up on the latest manufacturing technology as you would find in high quality U.S. facilities. They are even audited by the FDA.
Their products are pre-cooked and cased in a pouch which only takes 90 seconds to reheat in the microwave, making it very convenient. Yet the products taste as though you just cooked them yourself, though they stay fresh for 18 months!
I was fortunate to have been given the opportunity to review Jovial™ Brown Rice Pasta. They are gluten-free and taste wonderful! I like the taste better than the leading gluten-free brand and find the texture comparable. It is not mealy at all! Jovial™ pasta is a product of Italy. Say no more, right?
