Chestnut Cinnamon Gluten Free Pancakes (Dairy Free and Egg Free)

I needed to create a recipe to use up some aging flours. I thought, “Why not a gluten free pancake recipe?” There must be thousands of variation of pancakes, but I chose one I thought was unique, in that it did not contain any eggs or gum. That did not work out very well, therefore I adapted it. The recipe originated from one of Nutsonline’s Gluten Free Pancakes recipes. They were delish and I feel that they are a bit more healthy than a typical recipe. These were delish, and are dairy-free and egg-free! Enjoy! Berry Cheesecake Gluten Free Pancakes

Gluten-free Berry Cheesecake Pancakes

In an attempt to use up some cream cheese I had in the refrigerator, I thought about creating a cream cheese gluten free pancakes recipe. At first, I thought of just spreading the cream cheese between the pancakes. Then I thought, what about if I could taste gooey chunks of cream cheese in the middle? – and then top them with strawberries, blueberries or blackberries? That would make a cheesecake pancake! I ended up adding some to the batter creamed, and the rest in chunks. Oh my! – very filling and much like a dessert without all the refined sugar!

Gluten Free Potato Pancakes for Breakfast

Though this Potato Pancake Recipe was posted previously, I thought I would share it with you as a gluten-free breakfast or brunch idea. There are a number of fillings you can use for potato pancakes. My favorite is cheese, but I usually eat them plain or with a little butter on top.
