In an effort to add more vegetables to my diet, I am finding more and more ways of either hiding them or adding them to standard recipes. Homemade hash browns do not take much longer to cook than the frozen kind. The only extra work is in peeling them. However, they don’t turn out as crispy as frozen do. Fried Colored Potatoes and Onion

This dish is not only attractive, but very tasty, and naturally gluten free. If you are used to frying or roasting potatoes, adding a bit of chopped onion and/or garlic provides quite a bit of flavor. However, all three of these potatoes tend to have more flavor than brown/russet potatoes. Using colored potatoes is also very attractive in potato salad, as well. I picked up a very small bag of baby colored potatoes at Trader Joe’s. If you have one locally, you may want to check there if you can’t find them in your local supermarket. One would think making your own gluten free cheddar cheese potato chips would be easy an easy endeavor, however, it took much research and finally experimenting on my own to create this recipe. I wanted a fried potato chip, but not too brown (burnt tasting), as I saw in many other recipes online. I had other concerns, as well. Did I soak them in cold water first? If so, did this make them more crisp or just prevent browning of the raw potato? Ever since I have been meaning to create my own recipe. These can be made dairy-free by using a butter or margarine substitute, however, I used butter on mine. I thought my husband who likes to eat American style, meat and potatoes, may not enjoy these gluten free roasted red pepper mashed potatoes over regular mashed potatoes, but he did! Gluten-free Chicken Potato Casserole

This one dish gluten free casserole is very easy to make! Rather than wait 1 hour in the oven to bake chicken and potatoes, you can cook it on the stove top in 15-20 minutes, depending upon the size of your potatoes. And you can leave the skins on the potatoes if you desire, which speeds up the prep work. I appreciated this recipe because it uses only one pan. To my surprise, as I am not usually one to eat chunks of onion and especially garlic, they turned out so sweet in the dish! I hope this makes your gluten-free dinner meals faster and easier! Gluten Free Pesto Mashed Potatoes

A month or so ago, I went to an Italian restaurant where I was served pesto mashed potatoes and it was one of those hitting my forehead type of moments, “Why didn’t I ever think of that?” They were fantastic, but lacking in butter. Perhaps they used olive oil only. They had just a hint of garlic and basil, not overbearing as you may expect. It didn’t taste like pesto pasta, nor garlic mashed potatoes, but a unique, flavorful mashed potato. I was able to duplicate the recipe, and wanted to share it with you, though my version has more butter than theirs. Rich, decadent and creamy! Gluten Free Sweet Potato Puffs

These gluten free sweet potato puffs turned out wonderful! They look like miniature cream puffs. They are more moist inside, though, and without the filling. These lovely little puffs can be served as biscuits or a dessert. If using as a biscuit serve plain or with butter. You can also coat them with powdered sugar to serve as a dessert. I have tried them both plain and with powdered sugar (actually agave powder) and love them both! My hubby wants to try them with butter, but hasn’t yet. He keeps eating them plain. They are not real sweet (but sweet enough) which lends to its versatility. In my last batch I added chopped walnuts. Yum! They tasted close to a zucchini or banana bread. Have fun with these. They are sure to make Thanksgiving special. I can picture them served at brunch, as well. They are also a great way to use up those left over sweet potatoes! Mashed Gluten Free Sweet Potato Recipe

This gluten free sweet potato recipe was made from an error. My husband went grocery shopping. Big mistake! Huge! I asked him to pick up some sweet potatoes for my mashed sweet potato recipe and neglected to tell him I wanted the red ones. He came back with yellow sweet potatoes, a cross between a regular potato and red sweet potatoes or yams. The yellow ones are not as sweet and I could not use them in the recipe I had in mind.
