Gluten Free Turkey and Cranberry Pie
Imagine your favorite Thanksgiving fixings wrapped in a flaky gluten free pie crust. You can this pie with just the cranberry sauce and creamy turkey filling, or even add in some stuffing. This idea appealed to me, as turkey, cranberry and cream cheese sandwiches is my favorite way of consuming leftover turkey, but this now on my list of faves. Enjoy this gluten free turkey pie!

Creamy Gluten Free Turkey Casserole
If you are looking for a different way to consume your left over turkey from Thanksgiving, this gluten free turkey casserole is a sure way to do so. You may use the Progresso Vegetable Classics Cream of Mushroom Soup (it’s labeled gluten-free). If you’re like me, you may pick out the mushrooms and just use the sauce. Gluten Free Turkey Divan
Another great way to make a turkey casserole with your leftover turkey from Thanksgiving is to make a gluten free turkey divan, which is a creamy casserole made with pasta, broccoli and cheese. The original version, chicken divan originates from a hotel in New York that served it long ago. What really makes this recipe, is the crunchy topping of bread crumbs. On a cold winter’s day a good hearty, gluten free turkey soup is an American tradition. If you’re watching your weight, choose the white turkey meat, if there’s any left. Otherwise, the dark meat has more flavor, and is what is really needed in a soup. Without enough flavorful meat, salt is the main ingredient that brings the flavor to to any soup recipe. Gluten Free Frittata – Turkey and/or Vegetable
For another way to use your leftover turkey and fixings, give this gluten free frittata recipe a try. Fritta is Italian meaning “to fry”. It is made with beaten egg and is fried. It often includes vegetables, or even meat. As a child my grandmother used to make the best artichoke frittatas. The more cheese the better!
