Caramelized Red Onions with Balsamic or Red Wine

Using balsamic vinegar, you can make these delicious and sweet caramelized onions though you can use merlot (as I did – as shown) or other red wine. I call my version Merlot Caramelized Onions. It really depends on your tastes and how you will be using them. Use vinegar if you prefer a little tang. It doesn’t have to be balsamic. You can even do a little both and use red wine vinegar. Both versions are great with steak, chicken, or even mixed with vegetables. I would even add a few to top a salad.

Make this gluten free milk bread for any special occasion. Its soft, flavorful, moist dough looks stunning, without the need for braiding. You’d swear it contains dairy. While you can rise this dough only two times, a third time develops more flavorful dough. This bread reminds me of a gluten loaf my husband once made in our bread machine in the mid 90’s. Mmmm.

Gluten Free Brioche Rolls

When you want to serve the very best, this no-fail recipe for gluten free brioche rolls is the key. The dough not only doubles in size during the rising period but lifts up quickly and greatly as it expands in the oven. And it does not deflate upon cooling. There is no need for them to cool. Unlike most gluten free dough, you don’t have to wait until these rolls cool to serve them as they are not gummy whatsoever. The inner dough is tender, fluffy, and buttery. Its thin crust is slightly crispy on the sides and pliable on the top, just like traditional brioche buns. I dare even gluten-eaters to tell the difference. Recently, I saw a photo of cornbread waffles and chili and just had to create a gluten free cornbread waffles version. While my chili over-powered the flavor of these amazing waffles, I love them, even plain, without syrup. That’s unusual for me. They really are that tasty. Give them a try and see for yourself.
