Your body cannot live on rice alone. Adding a little corn in your diet keeps your digestive tract working. So, try making this homemade corn tortilla bread crumbs recipe and save yourself some money as well. I used it in my new recipe for Mexican-Style Chicken Parmesan (recipe coming soon). It was delicious and the chicken turned out quite crispy.

Corn Tortilla Bread Crumbs Recipe
- 8 gluten free 100% corn tortillas from Costco
- Salt to taste
- Gluten free oil spray
Preheat the oven to 275ºF with a shelf in the center.
Using kitchen scissors or a knife, cut/slice the tortillas in strips and then in tiny squares/rectangles. Over a baking sheet, rub them between your hands so that half of them crumbles. Spray them with oil and bake for 15 minutes.
Add the toasted tortillas to the bowl of a food processor. Add salt and run process them about 2 minutes or until them finely ground.
Use them in place of gluten free bread crumbs.
They fry up nice and crispy.
