The trouble most people run into when developing a gluten free calzone recipe is the lack of starch in the flour blend. Though this one is high in starch, it surely makes it easy to fold and handle the dough. You can fill it with your desire fillings. I have included several suggestions below. Don’t overdo your carb consumption. Tapioca flour is loaded with carbs. Remember, everything in moderation. Enjoy! Continue reading “Gluten Free Calzone Recipe”
Soft and Chewy Gluten Free Pumpkin Cookies
I must admit, this gluten free pumpkin cookies recipe took 10 different batches to perfect. Now they are perfect! If you desire a crisp bottom, chewy outside, and a soft chewy inside, you bake them for 11 – 12 minutes. The longer you bake them, the crisper the bottom becomes. For a cookie that is soft all over, you bake them for 10 minutes. Soft and chewy was a request of a couple of my Facebook followers. These are very lightly pumpkin flavored. Join me on Facebook or Twitter and request which gluten free recipes you’d like me create. Continue reading “Soft and Chewy Gluten Free Pumpkin Cookies”
Gluten-Free Sugar-Free Dairy-Free Chocolate Recipe
Sugar-free chocolate can be expensive, and if you have to find a safe gluten-free brand on top it, it can be even more difficult. With this gluten-free sugar-free chocolate recipe, you can make dark chocolate or chocolate ganache. If you are also on a dairy-free diet, you can still make both. For dairy-free ganache, instead of using heavy whipping cream, you use coconut milk. For the fat in this recipe, you have the option of using shortening (I use organic palm shortening) or coconut oil. Depending upon its use and your dietary needs will determine which ingredients you use. This recipe is low in carbs when not using cream. I hope you enjoy this recipe. It has many uses. You can even break it up to use as chocolate chips in your baked recipes.

Gluten Free Pear Crumble
You can make this gluten free pear crumble recipe much easier by using canned pears. However, fresh pears are full of vitamins and minerals. No matter what flour blend you use, it should out about the same because the recipe calls for very little flour. Note, though, tapioca browns easier, but is chewy, and cornstarch has high crisping qualities, and potato starch with just a little less. I have also provided some holiday garnish suggestions. This recipe can be made allergen-free if you skip the nuts. Continue reading “Gluten Free Pear Crumble”

Crusty Multi-Grain Gluten Free Boule (Egg Free)
This gluten free boule has taken me four attempts to create. It is very tasty, has a hard, crunchy crust, and a wonderful texture. During my previous experiment, I only used 1/2 teaspoon of yeast and allowed the dough to rest for about 18 hours. It gave it a bit of sourdough flavor. You can experiment with this yourself. Meanwhile, enjoy this crusty gluten free boule. It tastes so good just with butter. I can’t wait to use it for spinach dip during the holidays and smaller versions for soups and chili.
