Gluten Free Sweet Potato Apple Soup

A great tasting sweet and savory gluten free sweet potato and apple soup. Make a batch and freeze when you have the craving.

Ingredients:

  • 2 Tablespoons olive oil
  • 1 1/2 cups chopped yellow onion
  • 3 medium sweet potatoes, peeled and cut into 3/4-inch cubes
  • 2 red gala apples, peeled and cut into 3/4-inch cubes
  • 2 cups low-sodium gluten-free chicken broth (or vegetable broth)
  • 2 cups water
  • 2 - 3 dashes of nutmeg
  • Fine sea salt, to taste
  • Ground black pepper, to taste
  • 1 gala apple, cubed, for garnish
  • Chopped flat leaf parsley (or fresh basil), for garnish

Instructions:

  1. Preheat a heavy pot with oil over medium heat.
  2. Add the onion and saute until translucent, about 7 minutes.
  3. Add the sweet potatoes, apples, broth, water, and nutmeg, and bring it to a boil. Reduce the heat to low and simmer for about 15 minutes or until potatoes and apples are tender.
  4. Using a hand blender, puree the mixture until smooth. Alternative, allow the soup to cool in the refrigerator for several minutes. Then fill a blender two-thirds way full with the mixture and puree in batches.
  5. Ladle the soup into individual bowls and garnish with cubed apples (with the peel) and chopped parsley.
