Gluten Free Raspberry Chipotle Sauce

Recently, I purchased a bottle of Fischer & Wiser Roasted Raspberry Chipotle Sauce that I could not wait to use. Unfortunately, it was made in a facility that manufactures wheat products. I just had to create a recipe for everyone to use that is completely gluten free! Luckily, I had some frozen raspberries in the freezer! I used this gluten free raspberry chipotle sauce as a marinade for steak last night, only marinading for 30 minutes. Then I left the rest of the steak marinade for 24 hours and they were both great, but the 24 hour marinade had penetrated the meat a little bit more, creating a bit more flavor. My husband and I have a new fave marinade now. I even added a little sauce to our brown rice. Double yum! Enjoy. Continue reading “Gluten Free Raspberry Chipotle Sauce”

Gluten Free Beef Tostadas

Gluten-free Beef Tostada

This is a fairly easy, yet a tasty gluten-free recipe. You can either purchase pre-made gluten-free brown rice tortillas, which I did this time from Trader Joe’s, or you can make your own. I have included the link to my white rice gluten-free tortillas below. If you are cooking for kids you’ll need to adjust the heat by reducing the chili powder and cumin. If you like it real spicy, then by all means add more! This recipe is set at a medium heat. Often stewed tomatoes are added to tostadas, but since I found out I am allergic to tomatoes I just add lots of spices and vegetables. Definitely consider adding tomatoes to yours! Enjoy.  Continue reading “Gluten Free Beef Tostadas”

Happy Thanksgiving to All!

I wanted to take the time to wish you all a wonderful and happy Thanksgiving! I appreciate all your support.

Every Thanksgiving I think back to 1981 when I cooked my first holiday dinner, all by myself. Well, perhaps not all by myself! I did have two older sisters who were in the kitchen non-stop to make sure I did not mess anything up. I found it a bit difficult to learn when they were doing everything for me, year after year, but what are sisters for? Right?

Finally, one day my mother handed down her Joy of Cooking cookbook to me. She did not like it, as she always depended upon her Betty Crocker cookbook for everyday recipes. Once I had the Joy of Cooking in my hands I was able to branch out on my own. I think the first thing I made from that cookbook were cream puffs. Yum! The puffs came out wonderful, but I wasn’t too fond of the custard. I wanted to duplicate the custard in the cream puffs from Victoria’s Bakery in San Francisco. Unfortunately, no luck there. Gluten Free Sweet Potato Puffs

These gluten free sweet potato puffs turned out wonderful! They look like miniature cream puffs. They are more moist inside, though, and without the filling. These lovely little puffs can be served as biscuits or a dessert. If using as a biscuit serve plain or with butter. You can also coat them with powdered sugar to serve as a dessert. I have tried them both plain and with powdered sugar (actually agave powder) and love them both! My hubby wants to try them with butter, but hasn’t yet. He keeps eating them plain. They are not real sweet (but sweet enough) which lends to its versatility. In my last batch I added chopped walnuts. Yum! They tasted close to a zucchini or banana bread. Have fun with these. They are sure to make Thanksgiving special. I can picture them served at brunch, as well. They are also a great way to use up those left over sweet potatoes! National Gluten-free Diet Awareness Month

Gluten-Sensitivity Image

November is not only National Gluten-free Diet Awareness Month, but a special day is marked for the Celiac Disease Foundation.

Since November 19, 1990, when the Celiac Disease Foundation‘s articles of incorporation were filed with the California Secretary of State’s office, (and are refiled annually), they, a non-profit public benefit corporation, have been diligently raising awareness of the disease. Celiac Disease Foundation Continue reading “National Gluten-free Diet Awareness Month”

Gluten Free Navy Beans

A gluten free navy beans recipe just like my mother used to make. The only difference is that she used to add a little tomato sauce for color and flavor. I used a little tomato-free gluten-free chipotle sauce. This is a great recipe to make and freeze individual portions for those busy days and nights, or just when you’re too tired to cook. Serve it as is, or over rice. It’s very flavorful. I hope you enjoy this recipe as I have over the decades. Continue reading “Gluten Free Navy Beans”

Gluten Free Chicken Biryani (Indian Chicken with Buttery Rice)

Image: Gluten Free Indian Chicken with Buttery Rice

This version of chicken biryani (Indian chicken recipe), is made with ingredients that you can find at your local grocery store and is a naturally gluten free recipe. I used to work near a restaurant that had the best Indian food ever. I miss their butter chicken, but cannot find a recipe which can even come close. I must say that this recipe is not butter chicken, however, it is buttery and I like it almost as much. It takes quite a bit of time to make, but the rice can be made in advance which is very convenient, especially if you are having guests. Enjoy this treat. I sure did!
