Gluten Free Spanakopita
This gluten free spanakopita recipe is a Greek tradition. The filling consists of spinach, cheese, onions, egg, and seasoning. If you are vegetarian, you can substitute the cheese with tons of fresh herbs and silken tofu or use dairy-free cheese like Daiya or Follow Your Heart. Instead of using my Gluten Free Phyllo Dough Recipe, which is the traditional dough bakers use, I used my Gluten Free Puff Pastry Recipe to produce a puffier dough.
You may have previously seen the folded version, but rolled spanakopita is also a well-known way of making them. I prefer to roll them when serving to guests so that they know what they are eating. If it were up to my husband, the dough lover, he would prefer the folded method as it produces more crust.
I list out several choices of cheese to use in your gluten free spanakopita. I find it’s best to use a variety of cheeses. It combines all of the best flavors and texture from salty to creamy. Use what you have on hand or what you enjoy the most.
This is one way of getting kids to eat spinach. If you wish to make it healthier, feel free to substitute the leeks with additional spinach. Using leeks is a rural Greek tradition. Continue reading “Gluten Free Spanakopita”
Small Batch Gluten Free Pound Cake Streusel Muffins
Betty Crocker makes a Cinnamon Streusel Muffin and Quick Bread Mix. It is not gluten-free. However, it provided the inspiration for these gluten free pound cake streusel muffins. I used my Heavenly Gluten Free Pound Cake Recipe but only made four muffins. There’s only two of us at home. Gluten Free Easter Cake – Colomba Pasquale – Italian Dove Bread
This gluten free Colomba recipe may be served as a sweet bread on Easter with ham or at breakfast or brunch. It is an Italian tradition. You may form it into its traditional dove shape by using paper molds or use a standard ring baking pan as I did. This bread is tender and not as sweet as cake, but sweeter than bread. Make it with dairy or dairy-free. Add your choice of dried or glazed fruit. It’s simply delicious! It’s a little like a bear claw pastry. Happy Easter! Gluten Free Italian Easter Pie
Being raised in a half Italian, Catholic family, surprisingly, I wasn’t familiar with Italian Easter Pie until I ran across a recipe couple of years ago. It contains a sandwich filling which bakes right inside the bread dough. I’ve had it on my list of to do’s ever since. I finally created a gluten free Italian Easter pie. The dough is much like flatbread or rustic Italian pizza. The filling is traditional using ricotta cheese, ham, and eggs. I hope you enjoy it. It’s perfect for an Easter brunch. Gluten Free St. Patrick’s Day Cookies
This recipe for gluten free St. Patrick’s Day cookies is incredible! They’re in between a shortbread and sugar cookie. Shortbread cookies contain more butter than sugar cookies which makes them a bit softer and richer. Everyone loves these cookies. Adding a little green or Irish theme makes them that more special.
