I have been wanting to develop a gluten free chicken korma recipe for quite some time, now. It is my favorite Indian dish next to butter chicken. Chicken korma is a spicy Indian dish using turmeric or curry plus other spices. Along with cream, it creates a rich, flavorful dish. You can adjust the heat in this gluten free chicken korma by reducing the cayenne pepper, ginger, and coriander, if necessary. It is of medium heat for an Indian dish, though if not accustomed to Indian food, you may think it is hot. Indian food contains many anti-inflammatory spices, making it a smart choice for an entree. Gluten Free Breaded Chicken using Whole Grain Crackers

Gluten free breaded chicken is no different than regular chicken. I usually use homemade gluten free seasoned bread crumbs, however, this time I wanted something more nutritious. I chose to use Van’s gluten free crackers. They come in several flavors and they’re all whole grain. I used their Lots of Everything flavored crackers. I used chicken breasts for this recipe, however, you can do the same thing with chicken tenders. Meanwhile, they turned out moist and delicious. Enjoy! Jerk Chicken (Gluten Free)

Jerk spice is a very hot and spicy seasoning mixture popular in Jamaica. It can be made applied to meat wet or as a dry rub. This gluten free version of jerk chicken can be made with mild peppers. I used canned green chiles. If you’re a brave sole you can use hotter chiles such as habanero and jalepeno peppers*. They pack a deadly heat, but I’ve provided some pointers for you in the tips section. Habanero peppers are the hottest chiles easily found in the U.S. and are a bit tangy. Jalepeno contain a moderate heat in comparison to habanero peppers, but is still too hot for me. They are also a bit sweet, similar to bell peppers. Gluten Free Chicken Mole (Mild)

Mole is a flavorful Mexican sauce that contains just a tad bit of chocolate. (Chocolate is great in chili, as well.) It usually contains plenty of hot chiles, but this gluten free chicken mole does not. Because chicken tenderizes so quickly it is a fairly fast recipe. When all is said and done you have a rich sauce covering moist, tender pieces of chicken. Instead of serving this with gluten free tortillas, you may serve it with soft naan bread (Indian flatbread). Creamy Saucy Gluten Free Black Bean Chicken Chili

I have to say, this is the best chili I have ever eaten! It reminds me of ham and beans, made with fresh ham. It is very flavorful, and is made without chili powder and without tomatoes. Due to the amount of cumin it is on the mild spicy side. To make it kid-friendly, cut back on the cumin, and add additional salt. Chicken and Vegetable Gluten Free Risotto (with Vegan Option)

If you have some leftover chicken, this gluten free risotto recipe will knock your socks off. Make it sweet or spicy with two choices of sauces. This is also a dish you can easily make in advance for guests. For a quick and easy weeknight meal, use left over chicken and vegetables. All you’ll need to do is cook the risotto. Gluten Free Chicken Alfredo

Though I already have a similar recipe for Gluten Free Chicken Alfredo, this one is a bit different. It is egg-free, and thickened with a tiny bit of starch. I also cut the chicken in the traditional bite size pieces, versus serving a chicken fillet on top of the creamy pasta. Though this dish is traditionally served with fettuccine noodles (see my Gluten Free Egg Noodles recipe), you may use your favorite gluten free pasta. I like to use penne pasta as an alternative. Gluten Free Chicken Noodle Soup

Though gluten free chicken noodle soup may be made with your favorite ready-made pasta, I chose to use my new homemade gluten free egg noodles (tastes more like pasta) in this recipe. Whether you’re down for the count due to a winter cold, or you just wish to warm up a bit, this soup has a ample flavor, and you’ll love the texture of the noodles. There are a couple of things that prompted this recipe creation. The texture of the noodles reminds me of Campbell’s Chicken Noodle Soup, which caused my cravings. The second thing, was that I need a gluten free chicken soup recipe to link to in my upcoming gluten free matzo ball soup recipe.
