Gluten Free Soba Noodles Stir-Fry

Soba means “buckwheat” in Japanese. Many Japanese dishes contain soba/buckwheat noodles. King Soba offers safe, gluten free soba noodles in a variety of flavors. My favorite is their Buckwheat & Sweet Potatoes Noodles. Buckwheat noodles are so much healthier than rice pasta. I use them in stir-fry as well as other pasta recipes. The texture is amazing and holds up well. Just be sure to cook them al dente before frying them in this recipe. I usually use the Sweet Potato Soba Noodles. I just love the sweet flavor, even in savory dishes. They would be ideal for this dish as it is slightly sweet and slightly spicy. Sweetness with spiciness is a marriage made in heaven, in my book. Panko breadcrumbs are Japanese-style bread crumbs made from the dough of bread without crust. As you can see in the below photo, panko is white, not toasted crumbs. I throw some gluten free panko crumbs into the batter I use for my Gluten Free Tempura recipe as it adds texture. Each year when I go to the Expo West trade show, in Anaheim, I am honored with a package of a Tasty Bite product. This year they repeated my favorite product, Asian Vegetable Rice. I haven’t looked for it yet in my local store, but I was desperately craving some. So, I created this copycat Asian brown rice recipe. Theirs contains white rice, I believe. Therefore, this recipe contains more fiber, can be made sugar-free and dairy-free, and provides you with plenty of substitution choices. Make it spicy or mild. While the ingredients of Tasty Bite Asian Vegetable Rice is slightly different, this recipe is extremely delicious. You can turn it into a casserole by simply adding your favorite protein. To make a great-tasting gluten free chow mein recipe you need the same ingredients as its gluten counterpart. It’s all in the quality of noodles you use. I use brown rice spaghetti; however, using spaghetti containing corn is more authentic. Heartland’s gluten free spaghetti is excellent. Quality brands of brown rice spaghetti include Tinkyada and Jovial. Add this recipe to your easy gluten free recipes as it cooks up fast. Enjoy!

Gluten Free Chow Mein Recipe with Chicken

Gluten Free Chow Mein Recipe with Chicken

Gluten free chow mein with chicken, in its basic form, containing easy to obtain ingredients. Use your favorite vegetables.

Ingredients:

  • 1/2 lb. gluten-free brown rice spaghetti (or a GF brand containing corn)
  • 1/2 teaspoon sesame oil
  • 1 Tablespoons cooking oil
  • 1 1/2 lbs. boneless skinless chicken breasts, cubed
  • 1 Tablespoon dark sesame oil*
  • 4 medium carrots, thinly sliced
  • 6 green onions, whites only, thinly sliced (reserve greens for garnish) (or 3/4 cup chopped yellow onion)
  • 1 1/2 cups sliced celery
  • 1/2 cup frozen spinach, thawed (or bok choy, cooked and drained)
  • 1 clove garlic, minced or grated
  • 1 cup low-sodium gluten-free chicken broth
  • 1/3 cup gluten-free low-sodium soy sauce (or San-J Tamari Sauce)
  • 1 Tablespoon granulated sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes
  • 2 Tablespoons + 2 teaspoons cornstarch (or potato starch)
  • 2 Tablespoons + 2 teaspoons water

Instructions:

  1. Boil spaghetti according to manufacturer's instructions. Drain, toss with 1/2 teaspoon sesame oil and set aside.
  2. Preheat a wok or heavy skillet over medium-high heat with neutral flavored cooking oil. Add chicken and cook until brown, about 5 minutes. Remove chicken and set aside.
  3. Add sesame oil and heat until hot.
  4. Add carrots and saute for 4 minutes.
  5. Add onion and celery and saute for until onion is tender, about 5 minutes.
  6. Add spinach and garlic and saute long enough to heat, about 1 minute.
  7. Add chicken broth, soy sauce, sugar, ginger, pepper flakes, and bring to a boil.
  8. Mix cornstarch with equal amounts of cold water and pour into the sauce, whisking as you pour.
  9. Return chicken to pan, stir and heat long enough to warm the chicken.
  10. Toss with gluten free pasta and allow noodles to absorb the sauce for about 5 minutes.
  11. Serve alone, or topped with crunchy chow menu noodles, see the above link.

Tips

*If you have hot chili oil, use 1/2 teaspoon of it to replace the sesame oil and omit the red pepper flakes. Chili oil is what I use, but not everyone can find it.

You can add any vegetables you desire: snow peas, yellow onion, green or red bell pepper, or even water chestnuts.

Gluten Free Lumpia and Dipping Sauce

While I already have a gluten free egg rolls recipe on this site, this gluten free lumpia recipe is a bit different. The filling and dipping sauce is spiced with garlic, and the sauce has strong accents of garlic and soy sauce. I usually make my egg rolls filled with ground pork, vegetables, and scrambled eggs and my spring rolls with all vegetables. This lumpia is filled with ground beef and vegetables, though you may use pork, shrimp, and more, as well as just vegetables. Either way, they are crispy and delicious as well as the sauce. Gluten Free Chinese Food at Home: Moo Shu Beef Recipe

I originally went gluten free in 2005. I have long since given up on eating out at Chinese restaurants other than PF Chang’s. They serve sumptuous gluten free Chinese food, but most dishes are extremely high in calories. So, I often make my Chinese food at home instead. Moo shu is usually served with pork; however, I used beef in this recipe. You may serve it over rice or make it low-carb by serving it over sauteed vegetables. You can even use it to stuff a gluten free tortilla or pita pocket. Made with top sirloin, it is exceptionally tender and delicious.
