Gluten Free Biscuits

I really wanted to make gluten free biscuits a little healthier than the traditional recipes. I did not use corn starch in this recipe, therefore it is corn-free, depending upon which margarine you use. I used Smart Balance Spread versus the traditional butter. I am looking forward to trying one of the Earth Balance Spreads, too. Other changes I made were substituting agave syrup for sugar; and instead of using buttermilk I used non-fat Greek yogurt. This recipe is not dairy-free due to the Greek yogurt, but Greek yogurt is more easily digested compared to regular dairy products. If you haven’t had biscuits since you started your gluten-free diet I believe you will find these biscuits very delicious! Gluten Free Potato Pancakes for Breakfast

Though this Potato Pancake Recipe was posted previously, I thought I would share it with you as a gluten-free breakfast or brunch idea. There are a number of fillings you can use for potato pancakes. My favorite is cheese, but I usually eat them plain or with a little butter on top. Potato Frittata with Pepperoni

Frittata is typically an Italian recipe, but you can make any type of frittata you wish. Frittata is similar to a quiche without the crust. This particular potato frittata is very satisfying, and very flavorful with the added pepperoni. Kids love the idea of a pizza pie, but frittata is an adult favorite, as well. You can substitute other sausages for this recipe. There are ways of lowering the fat and sodium content, which I discuss in this article. Low Fat Baked French Fries

Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise form the bottom through holes in the pan, allowing browning to occur on both sides. A little olive oil spray makes them taste like regular french fries. UPDATE: I have successfully made these using a regular baking sheet. I had quite a bit of leftover white rice and happened to see a restaurant featured on television that shared a portion of their ingredients for rice pudding except for one secret ingredient. And it is naturally gluten free. It looked as if it contained warm maple syrup; and the host of show said it tasted like french toast. I just had to try to make it. The original recipe did not use vanilla bean but I had to add some, as vanilla beans give it a wonderful flavor! I hope you enjoy this as much as I enjoyed creating, and consuming it. Gluten Free Cranberry Coffee Cake Recipe from Namaste Mix

Gluten Free Coffee Cake

I was sent a couple of items from Namaste Foods to sample. The one I recently tried was their Biscuits, Pie Crust and More! Flour Blend which also makes dumplings, shortcake and coffee cake. The package had several recipes including an orange cranberry coffee cake recipe. Unfortunately, I am allergic to citrus and had to substitute the orange juice for applesauce and added more cinnamon (yum!) – very moist! I have included my recipe along with the recommended ingredients and instructions (see “versus…”). I recommend this mix, as it is close to Bisquick and I bet will make some very good recipes besides this one. I can’t wait to try the pie crust! The coffee cake rose beautifully, even with all of that heavy applesauce! This recipe is gluten-free, casein free, (egg-free if you use an egg substitute), and (nut free, if you skip the walnuts on top). I make them with fresh left-over potato pancakes, not instant potatoes. This recipe is gluten free and without any type of flour. I had never made banana fritters, had never eaten gluten free banana fritters, and hadn’t eaten any in decades. However, I was watching a cooking show that provided me with some tips on deep frying batter which makes these gluten free banana fritters (or mango) nice and crispy, and prevents the oil from penetrating deep into the fruit.
