Homemade Butterscotch Custard

While not all ready-made or boxed pudding brands are gluten free, you can always use naturally gluten free ingredients to make them from scratch. Instead of making gluten free pudding, which contains flour, I prefer custard. There isn’t any floury taste or texture in custard because it does not contain flour. While this may not occur in pudding with wheat flour, it does in gluten free pudding. In addition, gluten free flour creates a bit of slimy texture in pudding (too thick). Gluten Free Cheese and Spinach Gnocchi

Tuesday isĀ National Cheese Lover’s Day. So, I thought I would share my latest gluten free recipe with you that contains cheese. It doesn’t contain everyday cheese, but either cottage cheese or ricotta cheese (which looks a lot like cottage cheese, but has smaller curds). It’s delicious!

IĀ used 4% fat cottage cheese and chopped the curds up a little smaller. However, it appears pureeing it in a food processor would make it easier to roll. I also used Parmesan cheese in this recipe. I adapted the same recipe that I found in this month’s Sunset magazine. However, I use much less Parmesan and of course, gluten free ingredients instead of glutenous all-purpose flour. Meanwhile, you’ll have fun learning how to roll the gnocchi, which is the best way to make them. It leaves a nice sized space in which the sauce is trapped. Make Ahead Baked Gluten Free French Toast

My father is visiting with us and is 100 years old. While he enjoys my newest Gluten Free Cinnamon Raisin Bread Recipe, he finally admitted that he doesn’t appreciate the harder crust which is a result of long baking in my bread machine. He’s always enjoyed soft food, but as he ages, soft food is a requirement. He’s never even care for his bread toasted, just warmed, not brown or golden. So, I thought I would soften the ends by making him French toast this morning instead of dry toast and his awful cream of wheat (he’s not gluten free). The acidic fruit has been getting to him anyway.

To speed up the process I soaked the bread overnight. This way it was all set to fry up in the morning. Caring for an elderly parent is a lot of work and mornings are pretty busy. Gluten Free Gingerbread Granola

‘Tis the season for everything eggnog, pumpkin, peppermint and gingerbread. This gluten free granola recipe is no different, as it is gingerbread flavored. Nature’s Path makes one where for everyone sold, they done one to a food shelter. However, unfortunately, it’s not gluten free. Once I saw it, I just had to create my own recipe. I used most of the ingredients they use, accept I used “gluten free” oats, added tons of nuts, some brown flax seed meal (it has more omega’s than golden flax seeds), agave and honey. I didn’t have any crystallized ginger, but omitted the rice starch intentionally. Because it contains evaporated cane juice sugar, it turns out crispier than the Gluten Free Granola Recipe I usually make. This gluten free gingerbread house recipe is both structurally sound and delicious. A matter of fact, I’ve never cared for gingerbread, even when I ate gluten. I couldn’t stop eating this one! Most of the sugar cookies I have tasted are a bit dry as they all contain egg. Therefore, I added additional butter to the recipe I developed so that you do not have to sacrifice on flavor or texture. Additional butter makes them more delicate, but not as delicate as shortbread. They are somewhere in between shortbread and sugar cookies.
