Udi's Gluten Free Soft White Bread Copycat Recipe

So many of my followers have been enjoying the new Udi’s Gluten Free Soft White Sandwich Bread that I thought I would make a copycat recipe.  My husband really enjoys it for toast and for sandwiches. This bread is designed to make sandwiches in advance and the bread remains soft and fresh. It is wonderful to toast as well. (This recipe calls for Expandex.) Keep in mind that while this bread is denser compared to my other gluten free bread recipes, you can leave it on the counter and it will remain fresh for at least two days. I had a member email me requesting a copycat recipe for Tate’s Chocolate Chip Cookies. Not until I made them did I discover that there are actually Tate’s Gluten Free Chocolate Chip Cookies on the market. Tate’s cookies are extremely popular in the South Hamptons and are sold at the Tate’s Bake Shop, well known from coast to coast. After tasting the new Trios Gluten Free Girl Scout Cookies, I knew those who were not able to find them in their area would have to taste these amazing cookies. I got right on it today. After several tweaks on baking times, height of dough, amount of invert sugar and butter, I finally did it. I knew on the last 2 batches that I baked, that I had achieved a copycat recipe of the Gluten Free Girl Scout Cookies, Trios! Again, I was thinking, “OMG!” I’ve only used that term twice on this blog, but they are truly amazing. Gluten Free Coleslaw Like KFC’s

For years I used to crave KFC’s coleslaw. Now that us gluten free eaters can no longer eat at KFC, I thought you would appreciate my KFC clone dressing. McCormick spices are gluten-free. Be sure to avoid using mayonnaise jars that gluten-eaters may have used if you are gluten intolerant. Double dipping knives in jars can leave cross-contamination. They dip in the mayo jar, spread it on their bread, and then dip in the jar again. Meanwhile, enjoy this gluten free coleslaw recipe.
