Wink Frozen Desserts Copycat Recipe – The 100 Calorie Pint – Banana Nut – No Machine Required

With multiple flavor variations, this Wink Frozen Desserts copycat
recipe, known as the 100 calorie pint, is the best thing ever! Now, when you have a bad day and eat an entire pint, your day goes from bad to better! ~ All with no guilt!

Flavorings:

The choices of flavors are nearly endless. You can add some instant coffee crystals or use brewed coffee instead of water to create a coffee flavor. Use any of the LorAnn Oils flavorings such as strawberry cheesecake. A little cinnamon and some of Lorann Oils butter flavoring make a wonderful cinnamon bun flavor.

For Banana Flavor:

The frozen dessert shown is my banana nut creation. At first, I used only banana extract, which tasted great. Then, I decided to boost the calories up just 5.5 per serving by adding 1/2 teaspoon walnut oil, creating a banana nut flavor. Olive Nation Banana Extract 4 Ounce bottle will cost you $12.36 on Amazon (which is what I used). Where, a 4-ounce bottle of LorAnn Oils Banana Emulsion will cost much less, just $5.80. However, that particular flavor contains both natural and artificial flavoring.

  • 1 tablespoon Olive Nation Banana Extract, (or other flavor(s), to taste*) (or other flavor(s), to taste*)
  • 2 teaspoons Walnut Oil optional – for banana nut flavor - not calculated in nutritional facts**
  • 1 teaspoon baking soda
  • 2 teaspoons walnut oil** (optional)
  • NuStevia Cocoa Syrup for topping (optional)

Instructions

  1. In a medium-sized saucepan, whisk together the inulin, pea protein, flaxseed meal, erythritol, guar gum, monk fruit powder, and turmeric, if using.

  2. Add the water and glycerin; whisk constantly over medium-high heat until it boils. Cook an additional 2 minutes.
  3. Remove from the heat; whisk in the stevia and flavoring(s) of choice, e.g., banana extract and walnut oil, if using. Then, stir in the baking soda.

  4. Set aside to cool. Transfer to an airtight container. Freeze; stir every 30 minutes scraping the sides of the container, until frozen. (If you don't have time to stir, that's okay. You do, however, end up with a better dessert if you stir it.

  5. Cover the top of the mixture, directly on top of the desert, with parchment or wax paper to prevent ice crystals from forming. Cover and freeze until ready to serve.

  6. Thaw for 10 minutes prior to serving or microwave on high for 10 seconds or until softened.

Tips

*Each flavor of Lorann Oils is different in potency. As an example, using 1-1/2 teaspoons of Lorann Oils Super Strength Peach Flavoring is perfect for 1/2 gallon of dessert.  However, if you use too much, it will create a bitter flavor.

**2 teaspoons walnut oil contains 88 calories and 56g total fat.
