After eating naturally gluten free food  for one week while on vacation, followed by a week of being sick in bed, I was in the mood for something really spectacular! This pressure cooker version of gluten free beef bourguignon fit the bill for myself as well as my husband. This recipe was literally the best beef dish I have ever made. it was incredible-tasting and easy to make. I was making noises while eating it, “Mmmm!” My husband kept saying how really good it was. They are so flavorful with soft centers and have slightly crisp edges. Their weight is not heavy at all. They are on the light side if anything. I’ve never had a cookie like them! These cookies are loaded with flavor, chocolate, and nuts. If you own a bakery, watch them fly out of the display case. Gluten Free Sun Dried Tomato Bread with Parmesan

I just had to create a gluten free sun-dried tomato bread with some Parmesan cheese. I love creating recipes that contain food to which I’m allergic, tomatoes in this case. I enjoy living vicariously through my husband’s meals. He thoroughly enjoyed this bread. He said that he could taste the Parmesan but didn’t recognize the sun-dried tomatoes. He did, however, note that whatever it was, was a little sweet. So, obviously the sun-dried tomatoes are not overpowering, but add just the right something to this lovely bread. I’m thinking it would make an awesome grilled cheese sandwich. He agreed but had his first piece as soon as I sliced the loaf along with some margarine.
