Gluten-free Cranberry Oat Nut Bread

My husband loves raisin bread, but I haven’t made him any since I have been gluten free. He used to make his own using the bread machine. I wanted to make him a gluten free oat bread recipe with raisins this morning, but I was out of raisins (used them in the gluten-free oatmeal cookies I made for him last weekend). I don’t care for raisins anyway, so I used dried cranberries instead. Oh! – it turned out so good! My hubby was very pleased, as well. I’m looking forward to adding walnuts next time, though the hubby is not a big nut fan. I also used Expandex® in this recipe, but you can make it without the Expandex by substituting additional oat flour. However, it will come out a little heavier. Perhaps adding an additional egg white may help, too, if you skip the Expandex. I can picture a chicken or turkey sandwich, possibly with cream cheese. Yum! It also makes a great snack! One of my favorite entrées is chicken or veal marsala. I had the craving, but no chicken or veal in the house. Oh my!  Onto another experiment I went…and here it is, steak marsala, gluten-free, of course! After making the test recipe for just my husband and I, we had a guest over and I made it again. I never got around to posting a recipe for Super Bowl, but I thought gluten-free cheese puffs would make a nice appetizer or snack for today’s game! This particular gluten-free cheese puffs recipe is not like the crispy snack cheese puffs, but more of a cream puff pastry. They are very light. While on our at-home vacation I wanted to make a few special dinners. Though this gluten-free pasta recipe is high in calorie, my husband may have ordered this dish at our favorite local Italian Restaurant, Nativo’s. However, we had it at home, all gluten-free! Gluten Free Pesto Mashed Potatoes

A month or so ago, I went to an Italian restaurant where I was served pesto mashed potatoes and it was one of those hitting my forehead type of moments, “Why didn’t I ever think of that?” They were fantastic, but lacking in butter. Perhaps they used olive oil only. They had just a hint of garlic and basil, not overbearing as you may expect. It didn’t taste like pesto pasta, nor garlic mashed potatoes, but a unique, flavorful mashed potato. I was able to duplicate the recipe, and wanted to share it with you, though my version has more butter than theirs. Rich, decadent and creamy! Banana nut ice cream is one of my top 5 favorite ice creams! I created this recipe for my holiday guests and they all enjoyed it very much. My sister, who professes she will not touch a banana, even enjoyed it! I made this banana ice cream in my ice cream maker, but almost ice creams can be made just by freezing it in an airtight container. I hope you enjoy this recipe as much as we have. Creamy Mimosa – Naturally Gluten Free

This mimosa recipe is naturally gluten-free. Though I am allergic to oranges, my guests enjoy mimosa for Christmas breakfast. One of my guests mentioned that the best mimosa she ever had was at a resort. I asked it was a creamy mimosa, and sure enough it was. So, I added a a splash of whipping cream to the blend and everyone loved it. What a perfect addition to any mimosa recipe! It created a frothy, creamy head. That particular guest ended up adding a bit of sugar to her glass, though. Later, I found a recipe online that did include sugar. Below is the recipe I made. Want to really wow your guests? Gluten Free Tuna Melt

I have never had a tuna melt before, but decided I could make a gluten-free tuna melt without cheese!  Of course, you can add cheese, if you desire. I wanted to add fish to my diet. I really do not like fish very much. I suppose there is a little child still left in me!
