Gluten Free Chili Recipe Without Tomatoes

This gluten free chili recipe is made without tomatoes. I taste-tested this recipe so much I didn’t even need lunch, it was that good! You don’t need to cover this up with cheese and onions, but by all means, enjoy! It naturally thickened without the use of flour, but you can make it as thin or as thick as you wish. I wanted a thick chili today for use in my chili lasagna recipe. I will post that recipe in the next couple of days. In deciding what ingredients to use in this gluten free chili recipe, I considered some of the ingredients of my daughter’s award winning chili recipe, chocolate and bacon, but decided to go on the healthier side with lots of peppers, onion, green chiles and lean ground beef. Gluten Free Biscuits

I really wanted to make gluten free biscuits a little healthier than the traditional recipes. I did not use corn starch in this recipe, therefore it is corn-free, depending upon which margarine you use. I used Smart Balance Spread versus the traditional butter. I am looking forward to trying one of the Earth Balance Spreads, too. Other changes I made were substituting agave syrup for sugar; and instead of using buttermilk I used non-fat Greek yogurt. This recipe is not dairy-free due to the Greek yogurt, but Greek yogurt is more easily digested compared to regular dairy products. If you haven’t had biscuits since you started your gluten-free diet I believe you will find these biscuits very delicious! Baked French Fries Mozzarella and Gravy with Optional Beef Stew

Gluten Free Gourmet Diner Food – made healthier!

I was watching the Best Thing I Ever Ate and they explained how they made french fries with Mozzarella cheese and gravy. Boy did they had my mouth watering! In their version, the french fries were soaked to remove some starch; swirled in a bowl of fresh garlic; deep fried in duck fat once; then again 24 hours later; and topped with Mozzarella cheese and brown gravy. I chose to make my Baked French Fry Recipe to make it lower in fat and calories, and threw in some of my beef stew with wine simmered gravy made with very lean beef with all excess fat removed. It was heavenly! You can even use bison. Have fun with this one! Add your favorite meat or leave it as is. I’m sure the kids will love this, too! – similar to chili cheese fries, but a bit healthier! Gluten Free Pizookie

BJ’s Restaurant Brewhouse makes an incredibly popular dessert called Pizookie, (pizza cookie). See my gluten free pizookie recipe below.) It is a warm, gooey, fresh-baked cookie served in a baking tin, topped with a double scoop of ice cream. You have a choice of several different cookies topped with your choice of ice cream. Most people either have to save room for this decadent dessert or many share it with others because it is such a large portion. Many people go to BJ’s because of this dessert! That’s how good it is!  Be careful, though! It’s so good you may not notice you’ve eaten too much until it’s too late!

UPDATE – August 9, 2011: BJ’s now serves a chocolate chip gluten-free pizookie! Hurray!

Chewy Gluten Free Chocolate Cookies with Chocolate Chips

Chewy Gluten Free Double Chocolate Chip Cookies

I not only broke down and made chewy gluten free chocolate cookies but made them with chocolate chips to boot, for a double chocolate delight! I wanted to duplicate the cookie recipe used in the Pizookies at BJ’s Restaurant Brewhouse. They serve you a warm cookie freshly baked in a large tin topped with 2 scoops of rich chocolate ice cream. They even add a square of Ghirardelli Chocolate. These cookies are to die for! Fortunately, theirs are made with gluten, or I would be sharing one every time I visited there. Due to their calorie content, I would not eat these cookies often, but they are a definite treat for guests and special events. These gluten free chocolate cookies are soft, chewy and rich with chocolate. Add walnuts or more chocolate chips. It’s up to you! Look for Pizookie recipe in tomorrow’s post! I am trying to cut dairy out of my diet a little bit at a time but miss my rich chocolate ice cream recipe. It’s one of my husband’s favorites, too. I have created several almond milk ice cream recipes, but today I incorporated the raw almond milk recipe into this dairy-free, gluten free, raw chocolate ice cream recipe and made it richer and creamier. It is high in protein compared to regular ice cream. You can make this recipe by using almonds or a lower protein version that is nut-free. I knew I had duplicated my dairy version perfectly once I saw the same consistency before it was frozen in the ice cream maker, just like homemade pudding before it sets in the refrigerator! Gluten Free Asparagus Prosciutto Risotto

On a gluten free diet many of us eat a lot of rice. Gluten free risotto is a nice change. I am getting tired of the same old rice dishes and wanted to mix things up a bit. The only risotto recipes I have taste-tested were in fine Italian restaurants, but never cooked it myself. Imagine that! And I’m half Italian! Our family always ate the same asparagus recipe, boiled, and dipped in mayonnaise while eating. Traditional risotto includes parmesan cheese cooked into the rice. It makes it creamier, though it is pretty creamy alone because of the starch content of the arborio rice.  However, because prosciutto is already very salty I opted on just topping the rice off with a little parmesan cheese. Most fried rice recipes are gluten free until someone places soy sauce in it. This gluten free beef fried rice recipe calls for tamari sauce, a gluten free soy sauce.
