Gluten Free Soba Noodles Stir-Fry

Soba means “buckwheat” in Japanese. Many Japanese dishes contain soba/buckwheat noodles. King Soba offers safe, gluten free soba noodles in a variety of flavors. My favorite is their Buckwheat & Sweet Potatoes Noodles. Buckwheat noodles are so much healthier than rice pasta. I use them in stir-fry as well as other pasta recipes. The texture is amazing and holds up well. Just be sure to cook them al dente before frying them in this recipe. I usually use the Sweet Potato Soba Noodles. I just love the sweet flavor, even in savory dishes. They would be ideal for this dish as it is slightly sweet and slightly spicy. Sweetness with spiciness is a marriage made in heaven, in my book. Gluten Free Chicken Adobo

Chicken Adobo Egg Rolls

I was watching the Today Show and saw a segment on adobo chicken. Adobo is a Filipino method of cooking food in vinegar and soy sauce. I have had adobo chicken before and enjoyed it; therefore, it sounded wonderful. This is my version of gluten free adobo chicken which is closer to teriyaki chicken since it contains ginger. It may be cooked on the stovetop or in a crockpot. Enjoy!

Gluten Free Paleo Peach Crisp

Sometimes there is confusion between crumbles, crisps and cobblers. They all contain a fruit filling topped with various ingredients. A crumble and a crisp have a crunchy topping. A crisp contains oats, where a crumble does not. A cobbler is topped with dough, much like biscuit dough. Gluten Free Panko Bread Crumbs – Breadcrumbs

Homemade Gluten Free Panko Breadcrumbs

Panko breadcrumbs are Japanese-style bread crumbs made from the dough of bread without crust. As you can see in the below photo, panko is white, not toasted crumbs. I throw some gluten free panko crumbs into the batter I use for my Gluten Free Tempura recipe as it adds texture. I have used many of my gluten free bread recipes to make panko, but none of them have been as crispy as when I use Schar rolls. Check out this super simple recipe. Gluten Free Beef Stew with Red Wine Sauce

I made a large pot of this gluten free beef stew last night. It was so delicious! I used an inexpensive wine, not one I would drink, though that is not suggested by the pros. I froze a bunch for my husband to take on his out of town trips and for unexpected guests. I’m not big on potatoes in my stew, so I only used a few for my hubby to enjoy. You can add more if you desire. I like my beef stew served over rice. There is no need to add Gravy Master or Kitchen Bouquet as the wine naturally creates a dark gravy. Enjoy!
