Walnut Cranberry Gluten Free Granola Bars

Gluten-free Granola Bar

You may have already seen my other Gluten Free Granola Bars recipe made with chocolate chips. This one we tweaked a bit by adding more walnuts along with the almonds.  ou can use any nuts you like, but using at least one soft nut is helpful for this recipe. For those who cannot tolerate oats, these are perfect. Homemade granola bars are one of our family favorites. I hope you enjoy it, too! Continue reading “Walnut Cranberry Gluten Free Granola Bars”

Raw Banana Ice Cream

Image: Gluten Free Sugar Free Raw Banana Ice Cream

There is a YouTube video on how to make raw banana ice cream with a juicer. You just remove the skin from bananas; freeze the bananas, whole; remove the filter or screen from your juicer; feed them through and voila! – You have soft serve banana ice cream.  However, what does one do if they do not have a juicer? You can even make ice cream without an ice cream maker and both without a juicer. This recipe is gluten-free, vegan, raw, refined sugar-free and sugar-free, as it is naturally sweetened. Enjoy this healthy treat!

Gluten Free Chili Recipe Without Tomatoes

This gluten free chili recipe is made without tomatoes. I taste-tested this recipe so much I didn’t even need lunch, it was that good! You don’t need to cover this up with cheese and onions, but by all means, enjoy! It naturally thickened without the use of flour, but you can make it as thin or as thick as you wish. I wanted a thick chili today for use in my chili lasagna recipe. I will post that recipe in the next couple of days. In deciding what ingredients to use in this gluten free chili recipe, I considered some of the ingredients of my daughter’s award winning chili recipe, chocolate and bacon, but decided to go on the healthier side with lots of peppers, onion, green chiles and lean ground beef. It did the trick! I hope you enjoy this gluten free chili recipe as much as we have. Continue reading “Gluten Free Chili Recipe Without Tomatoes”

Gluten Free Casserole: Italian Sausage and Rice

Image: Gluten Free Casserole with Rice and Sausage

This dish is not only delicious, but very easy and fast to make. I use a precooked, frozen organic brown rice that I get at Trader Joe’s. Now for the taste…You know how bacon makes everything taste great. Well, between the saltiness, sweetness and spices of the sausage and the sweetness from all the different peppers this dish is addicting! I bet you go back for seconds, maybe even thirds! It’s one of those dishes that when you’re putting away leftovers (if there are any) you just have to have one more bite!

Baked French Fries Mozzarella and Gravy with Optional Beef Stew

Gluten Free Gourmet Diner Food – made healthier!

I was watching the Best Thing I Ever Ate and they explained how they made french fries with Mozzarella cheese and gravy. Boy did they had my mouth watering! In their version, the french fries were soaked to remove some starch; swirled in a bowl of fresh garlic; deep fried in duck fat once; then again 24 hours later; and topped with Mozzarella cheese and brown gravy. I chose to make my Baked French Fry Recipe to make it lower in fat and calories, and threw in some of my beef stew with wine simmered gravy made with very lean beef with all excess fat removed. It was heavenly! You can even use bison. Have fun with this one! Add your favorite meat or leave it as is. I’m sure the kids will love this, too! – similar to chili cheese fries, but a bit healthier! Raw Chocolate Ice Cream

Raw Chocolate Ice Cream

I am trying to cut dairy out of my diet a little bit at a time but miss my rich chocolate ice cream recipe. It’s one of my husband’s favorites, too. I have created several almond milk ice cream recipes, but today I incorporated the raw almond milk recipe into this dairy-free, gluten free, raw chocolate ice cream recipe and made it richer and creamier. It is high in protein compared to regular ice cream. You can make this recipe by using almonds or a lower protein version that is nut-free. I knew I had duplicated my dairy version perfectly once I saw the same consistency before it was frozen in the ice cream maker, just like homemade pudding before it sets in the refrigerator! Creamy Asparagus and Potato Soup

Image: Gluten Free Creamy Asparagus and Potato Soup

I knew I had to use up the asparagus I had in the frig. I decided to make a creamy asparagus and potato soup. Out of all my gluten free soup recipes that are creamy, I find this one to be the healthiest. When deciding on a thickener I considered using a gluten-free sour cream and Greek yogurt, but remembered what Gluten Free Chef Rob mentioned about thickening things naturally. I already had some boiled potatoes in the frig which I added in, but you can add fresh potatoes to this recipe all in one pot. I usually use potatoes in sweeter soups such as my Zucchini Mango Soup Recipe and Butternut Squash and Apple Soup, but this turned out wonderful, – not too much asparagus, just right, and nice and savory! Enjoy! Continue reading “Creamy Asparagus and Potato Soup”

Gluten Free Potato and Bison Casserole

Beef Potato Casserole

As a gluten-free dieter one can eat just so much rice. That leaves potatoes! My mother used to make this dish for us for years on end. I hadn’t cooked it in years myself, but had all the right ingredients. She used to use beef and green bell peppers, but since I only had yellow, orange and red that is what I used. This used to be one of my husband’s favorites. I suppose I stopped making it as we got older and started watching our sodium content. We used to pour on the ketchup when we were younger. This used to be one dish my children would eat without any problems, too, even though it had something “green” in it! I hope you family enjoys this budget friendly casserole recipe. You can use beef or bison. This makes a great family meal. Continue reading “Gluten Free Potato and Bison Casserole”
