Gluten Free Raw Fudge
After watching this video recipe on Raspberry Ganache Fudge Cake I have been wanting to try it. Unfortunately, I had no avocado for the frosting, nor raspberries for the filling. Darn! I tried a different spin on things and made a smaller portion of what I really would like to call “guilt-free” raw fudge. Gluten Free Blackberry Sauce for Ice Cream and More
My father came for a visit recently and he just loves homemade vanilla ice cream. I only like vanilla if has a topping, though. So, I had some fresh blackberries that were not very sweet. I sweetened them up a tiny bit by making an ice cream topping. It is made with fresh blackberries, a little organic blueberry fruit spread and agave syrup. It is not very sweet, but the fruity flavor combined with the sweetness of the ice cream is just perfect. I enjoyed it, as did my other guests. Potato Frittata with Pepperoni
Frittata is typically an Italian recipe, but you can make any type of frittata you wish. Frittata is similar to a quiche without the crust. This particular potato frittata is very satisfying, and very flavorful with the added pepperoni. Kids love the idea of a pizza pie, but frittata is an adult favorite, as well. You can substitute other sausages for this recipe. There are ways of lowering the fat and sodium content, which I discuss in this article. Gluten Free Apple Bread Pudding Cake
I had two goals for this dessert. I wanted to make a dessert that was heavier than a cake, yet lighter than a brownie; with less sugar than the average applesauce cake. I used agave syrup, blended stevia powder, and some homemade applesauce. It came out between a good brownie and a bread pudding; moist, but not wet. This recipe is dair-free, but not egg-free.
