The cake mix recipe was tested by about 20 of my cookbook recipe testers and they all agreed that it’s pretty incredible. Continue reading “Gluten Free Coffee Cake with Fruit”

Gluten Free Swiss Roll or Jelly Roll with Dulce de Leche (Pumpkin Spiced or Cinnamon)

Gluten Free Swiss Roll with Cinnamon

I’ve been in the kitchen attempting to achieve an exceptional gluten free Swiss roll recipe. It turned out perfectly moist and easy to roll. This is a feat for Swiss rolls as they are much thicker than jelly rolls. However, you can also make a jelly roll using this low-sugar recipe. Because jelly roll pans make a thinner and longer cake, you can achieve more swirls when you roll it. While I’ve supplied a recipe for cinnamon caramel filling, I also make a few other suggestions. Enjoy! Continue reading “Gluten Free Swiss Roll or Jelly Roll with Dulce de Leche (Pumpkin Spiced or Cinnamon)”

Gluten Free Matcha Banana Cake

Gluten Free Matcha Banana Layer Cake

A lightly sweetened, fluffy, and spongy banana cake, with a texture between banana bread and cake. Need a caffeine boost that is healthier than coffee? Matcha may be your answer. Matcha is a powdered green tea from Asia that is full of anti-oxidants, makes a wonderful detoxifier, boosts memory, and keeps you calm, yet alert. See more benefits here. Meanwhile, you’ll love this cake! Fill it with cream cheese frosting or whipped cream. You can even serve it with whipped coconut cream from the chilled cans of coconut milk (with or without added sweetener), or serve it plain. It’s great in the morning or late afternoon for a pick-me-up! Continue reading “Gluten Free Matcha Banana Cake”

How to Melt Chocolate for Writing On a Cake

Melted Chocolate Written on a Birthday Cake

This recipe reminded me that I needed to share this recipe on this site, as I assume there are many people who wouldn’t know where to start when it comes to writing with white chocolate on a chocolate cake. I avoid commercial tubes as most of them contain chemicals and artificial coloring. If that’s you, read on to learn what to add to chocolate to make it flow smoothly and easily. Also, discover the gluten-free white chocolate brand that I use.

Three-Layer Gluten Free Peanut Butter Cup Cake

Three-Layer Gluten Free Chocolate Cake with Peanut Butter Frosting

The first time I made this cake, I used 5-1/2-inch round cake pans that I found on eBay for a steal of a deal. However, for my husband’s upcoming birthday party, I made an 8-inch three-layer version and froze it. I decorated this one differently as I needed to leave room for the birthday message. It’s a great cake to make in advance. You can defrost it the night before the event, covered, at room temperature. This cake is perfect for Valentine’s Day as well if your sweetheart is peanut-butter-cup-lover.

Gluten Free Cinnamon Streusel Pound Cake Muffins

Betty Crocker makes a Cinnamon Streusel Muffin and Quick Bread Mix. It is not gluten-free. However, it provided the inspiration for these gluten free pound cake streusel muffins. I used my Heavenly Gluten Free Pound Cake Recipe but only made four muffins. There’s only two of us at home. So, if you want to make a small batch you may; or you can multiply the ingredients by three and make an entire dozen. Continue reading “Small Batch Gluten Free Pound Cake Streusel Muffins”
