I saw some regular cannoli in a bakery decorated so elegantly that my first thought was that I just had to make a gluten free version! They were filled with mascarpone cheese, which is a sweetened Italian cream cheese. The one thing I will never order in a bakery is pre-filled cannoli, as sitting there just makes the cannoli shell soft. Ordering ahead of time is the only way to go, but making them from scratch is even better. If you’re considering skipping the chocolate dipping step, consider that when dipped in chocolate cannoli  stand up properly, instead of rolling over when served or displayed. I love banana nut ice cream and banana pancakes, and wanted to create a recipe for gluten free banana muffins that was a little healthier than the usual muffin recipe. I decided to use gluten free oat flour, as oats are nutritious. One third of a cup usually contains 7 grams of protein and 4 grams of dietary fiber. If you are gluten intolerant you’ll need to purchase a gluten free oat flour, as others will contain high amounts of gluten cross-contamination. If you are oat intolerant, Montana Gluten Free carries PrOatina, which some gluten intolerant individuals who are also sensitive to gluten free oats, may tolerate well. As many of your know, May is National Celiac Awareness month (and gluten-free awareness) . I was asked to contribute a gluten free cupcake recipe for the Cupcakes for a Cause event sponsored by the ACDA (American Celiac Disease Alliance). The number of cupcakes I needed to represent the number of years that I have been gluten free. Well, that seems simple enough, but because I fell off the wagon, so to speak, it hasn’t been quite 7 years, but that’s what I went with because that’s what I celebrate, the moment I found truth, gluten isn’t good. I have been wanting to create a gluten free vanilla wafers recipe for sometime now. It’s finally here. Now, you can make that banana cream pie or banana pudding you used to make. This recipe was adapted from Food Network’s Chef Alton Brown’s recipe for Vanilla Wafers. They are just wonderful. I’m thinking of replacing my gluten free milano cookies recipe for this recipe instead. Whether you make them bite size or regular size, they are a treat. They brought back some great memories from when I was young, as well as when my kids were young. There are a couple of variations which you can check out below in the Tips area. Typically Italian Pine Nut Cookies are made with marzipan or almond paste, however, you may use almond flour / almond meal, ground up, or even ground up pine nuts, as I did. You grind it to the consistency of any nut butter. Flourless cookies are wonderful, usually high in protein, thus lower in carbs. However, carbs still exist in the sugar. You may wish to use a natural sugar substitute, such as birch derived xylitol, if you are watching your carbs closely. Meanwhile, enjoy this pine nut cookies recipe. I definitely did. Gluten Free Cupcakes for Easter

Why not use one of these gluten free cake recipes and make gluten free cupcakes for Easter. They are wonderful for large groups, and can easily be frozen and then defrosted for frosting. Whatever your delight is, I’m sure you’ll find below, something that tempts your palate. Decorate in color! Add a little food coloring to the below fluffy white frosting, and perhaps use a little less fat (shortening or butter) to stiffen it up a bit or leave it fluffy.
