Gluten Free Fried Bananas

Fried Bananas (Naturally Gluten Free)

Don’t know what to do with over-ripened bananas? Make fried bananas! Fry them up in about 5 minutes and top them your favorite topping or the buttery sweet sauce straight from the pan. It’s truly an easy gluten free dessert recipe you cannot go wrong with. It’s a non-alcoholic version of bananas foster. Next time I make this recipe I’d like to try dredging the cut side of the bananas in almond flour before frying. That just sounds perfect to me. Wish I would have thought about it sooner. Enjoy! Chocolate Gluten Free Caramel Sauce

Image: Gluten Free Chocolate Caramel Sauce

The consistency of this gluten free caramel sauce is much like the hot fudge for ice cream you can purchase in jars. However you may heat it and thin it out with additional milk, if desired. It calls for my gluten free dulce de leche recipe (thick, rich caramel sauce), but you can also purchase dolce de leche already made. Hershey’s makes one that is gluten free. Once you have your dolce de leche made or purchased, this chocolate caramel sauce may be made, literally, in one minute. Someone once said that the only thing they would trade chocolate for is dolce de leche. Well, I wish they could taste this. It’s heaven on a spoon! Gluten Free Dulce de Leche Recipe (Caramel Sauce)

Dulce de Leche - Naturally Gluten Free

I keep hearing rave reviews about every homemade dulce de leche recipe (thickened, sweetened milk). I even read one review that stated, “the only thing I would trade chocolate for.” I knew I just had to make some. It’s much like a caramel sauce, but not as sweet and without the concern of barley malt sometimes found in caramel coloring. However, caramel coloring is usually made from corn. That’s another thing I like to avoid when at all possible, corn, and especially corn syrup which is sometimes called for in a dulce de leche recipe. Coconut Whipped Cream – Dairy Free

Gluten Free Cake with Dairy Free Whipped Cream

This is a wonderful addition to your gluten free desserts! I found a few recipes online for coconut whipped cream, but I could tell that none of them would do the trick. One had it right, though, in using just the cream of a can of coconut milk. Yet it called for regular sugar, versus powdered. If you’re vegan, or prefer not use highly processed powdered sugar, you may consider using powdered evaporated cane sugar. As of last fall, I purchased some at Trader Joe’s. They carry it as “Organic Powdered Sugar”. It comes in a bag. For my gluten free dairy free readers, I hope you enjoy this dairy free recipe! Note: The topping on the cake in the photo below is the coconut whipped cream, not the other layers. Continue reading “Coconut Whipped Cream – Dairy Free”

Gluten Free Green Pea Cake

Image: Gluten Free green Pea Cake

This cake is to die for, especially if you enjoy chocolate and sweetened whipped cream.  But you ask, “Pea flour recipes?” Yes. Peas are part of the legume family, and when ground into a flour may be used in larger quantities than other bean flours, as they are not as strong or bitter and the pea flavor is more easily hidden among other flours. Green pea flour is wonderful to bake with, as it is very high in protein, 4 grams of protein in every 1-1/2 tablespoons. No need to run out and purchase green pea flour. If you own a coffee grinder, just purchase a bag of green split peas at your local grocer and grind them up into a fine powder. If it appears to be gritty, don’t worry. They will break down in the cooking process. Continue reading “Gluten Free Green Pea Cake”

Flourless Gluten Free Cake Recipe: Made from Walnuts

Flourless Walnut Cake

This gluten free cake recipe turns out a very delicate, lightweight, yet moist, gluten free cake. One layer may be used as a coffee cake, without the heavy weight, or layer it, if you desire. It contains no oil, as the walnuts and egg supply sufficient amounts of fat. Garnish with honey or agave and top with walnuts or make 2 layers and frost with a cream cheese or white frosting. Whether serving with coffee, tea, or a glass of milk, this gluten free cake will surely hit the spot if you have a sweet tooth, and it is all free of highly refined sugar (depending upon if you use honey or agave) and is high in protein. Enjoy! And please read tips below before baking. Continue reading “Flourless Gluten Free Cake Recipe: Made from Walnuts”

High Protein Gluten Free Crepes – Blintz – Cheese Rolls (Flourless)

Image: Gluten Free Crepes

I needed to create a cheese rolls recipe, often known as blintz, using tapioca flour starch for an eHow video and thought I would include dairy-free options. Though you may use cow’s milk for a creamier crepe, dairy-free milk or even water will work. I filled my crepe with chopped sauteed Swiss chard with garlic, a mixture of sauteed onion and red bell pepper, topped with a little Gluten Free Bechamel Sauce. Though these are high in egg, they do not taste eggy. Fill with anything sweet or savory. A crepe filled with cottage cheese is known in the Jewish community as a blintz. Others fill them with cheese and roll them up like a burrito around all sides and bake until warm. Usually, they are then topped with a fruit sauce. Gluten free crepes are like an empty canvas. Create away! Continue reading “High Protein Gluten Free Crepes – Blintz – Cheese Rolls (Flourless)”
