Watermelon Smoothie Recipe

Gluten Free Watermelon Smoothie

The other day I was watching the Paula Deen show and she made water melon coolers. I happened to have had a huge watermelon that I had planned on using when I had company, but didn’t. Making a watermelon smoothie was a perfect way to consume the watermelon fast and watermelon is a great diuretic. I am allergic to citrus so I skipped the lemon juice, but wish I could have used it. But even without the lemon juice, these are

great! And if you choose to add Greek yogurt, it will assist those with candida, though they should avoiding sugary drink. Paula used watermelon, lemon juice and a big scoop of lemon sorbet. Lemon juice is also a great diuretic. I don’t recall her portion sizes on ingredients, but you can’t go wrong with this smoothie recipe, as it is very forgiving. I used Greek yogurt and pineapple juice, but you can use just about anything creamy with any juice you wish. Suggestions for creaminess are: vanilla ice cream, flavored yogurt, whipping cream, etc. All you need is a blender. Enjoy this refreshing watermelon smoothie! You can even make popsicles or other gluten free beverages and cocktails! Continue reading “Watermelon Smoothie Recipe”

Apple Corn Cake and Stewed Blueberries – like a soft polenta cake

Image: Gluten Free Apple Corn Cake

I was watching Chef Emeril Lagasse on The Martha Stewart’s Show and he had my mouth watering when he made a corn cake, similar to a polenta cake, often made in restaurants as a side dish, topped with stewed cherries. I was determined to make my own gluten free version, but healthier. I made it with blueberries; without refined sugar, and sweetened it with applesauce and a tiny bit of agave syrup; used one less egg and added applesauce instead of sugar and lemon zest, making it like a bread pudding. Cheesecake Stuffed Strawberries – Gluten Free Sugar Free!

Image: Cream Cheese Stuffed Strawberries

I was watching Paula Deen the other day and her son was on her show and made stuffed strawberries with cream cheese and powdered sugar. I made them, too, as a gluten free sugar-free recipe! I can’t think of anything that I would enjoy more on a hot summer day, and did! I had so much fun testing this recipe using different sweeteners. I didn’t care for them with agave but enjoyed them with powdered sugar and stevia. Surprisingly, I liked these strawberries better with stevia. I hope you enjoy these, too! Gluten Free Roasted Garlic Walnut Pesto

Gluten Free Walnut Pesto

I wanted to make a walnut paste to be used on pasta or when chilled even on crackers or celery, but the recipes I found contain raw garlic. I really wanted to make a walnut paste with roasted garlic, therefore, I began a new experiment. I thought about using pine nuts, but I wanted to create something yummy for everyone that was affordable. You make this as a paste or as a walnut pesto sauce. Gluten Free Brioche

Gluten Free Brioche Buns

Brioche is reminiscent of the first breads ever made. When Marie-Antoinette said, “Let them eat cake!” she was referring to a bread much like brioche, in between an egg bread and cake. I watched Martha Stewart make brioche buns on her Friday, April 30, 2010 episode, and I just had to figure out a way of making a gluten-free brioche. With a few alterations I had much success! They rose very nicely. This gluten free brioche recipe is a sweet, buttery, spongy egg bread and is like nothing I have ever eaten – an experience everyone should have at least once. This recipe is much faster to make than typical brioche. You do not have to wait several times for the dough to rise, especially the one you wait for overnight. No one would ever guess this is a gluten free brioche, as it does not taste grainy. You may serve it as a dessert or with a meal just as you would serve corn bread. Brioche is very popular in New Orleans. Continue reading “Gluten Free Brioche”

Chewy Gluten Free Brownie Recipe

Gluten Free Chewy Brownies

This is my first stab at creating a gluten free brownie recipe. It turned out very chewy, just what I had in mind. They are not cake-like at all. I used potato starch in this one. Next time I may try using almond flour just because I love the taste of it, but this time I just added some chopped nuts. You can use your favorite nuts. I not only enjoyed the brownies, but I really liked the fact that there was not a lot of mess to clean up as I went along. Continue reading “Chewy Gluten Free Brownie Recipe”

Gluten Free Pear Corn Muffins

Homemade Gluten Free Pear Corn Muffins

I saw another great dessert on Martha Stewart’s Show last week, Corn Muffins with Pear and Candied Ginger. Of course, I had to create a gluten free muffin recipe version. It does not call for superfine rice flour. The original recipe called for candied ginger which did not sound appealing to me, but I will never know, as I did not have any on hand. The recipe below calls for many ingredients, but is fairly simple to make. This is the best gluten free muffin recipe I have ever made or ever tasted – straight out of the oven and when cooled. Gluten Free Custard Recipe for Cream Puffs, Creme Brulee and More!

Baked Custard

Custard is my favorite dessert next to ice cream and this one is my favorite, as it is a custard recipe for cream puffs! I also use it for creme brulee. It’s a great all-purpose gluten free custard, without the use of any flour. I created a Gluten Free Cream Puff Recipe yesterday upon the request of one of my readers and for my father who is visiting me. He’s Italian and cannot resist a cream puff, even a gluten free cream puff! A matter of fact, I had my best shaped cream puff on the table and had left the room. Upon returning, I found the cream puff in his mouth! I told him I was saving that one to fill and needed to take a picture of it. He said, “The damage is done!” and laughed! We both laughed. My father is 100% Italian and cream puffs are a delicacy. He loved that one but loved the ones I later filled even more. Being a connoisseur of cream puffs, he can attest to that this custard recipe for cream puffs is tops in his book! I hope you enjoy, as we both did!
